I tried the Arx Fatalis demo, though, and I couldn't get past the horrible controls. Did I do something wrong or is it something I'd just have to get used to?

Regarding the controls, I'm not sure what you're referring to. I did find it hard to quickly form the runes during battle in order to cast spells. So, I would pre-cast the spell (you can store up to 3 spells at a time) and then press '1', '2' or '3' to release them in battle. Some users with newer PCs had issues getting the engine to recognize the runes. Perhaps that's the issue you had. See if this helps.

That might have been it. I probably skipped whatever magic-related thing I was supposed to do because I didn't get how to do it :P

I also had issues just interacting with the environment. I think it was that I got annoyed that I had to stop moving in order to attack. Something like "stop moving and then click to activate aim, click to jab" so maybe there's a way to configure it better? I don't know if that makes sense, but looking back I think there's more to it that interests me, so if this doesn't make sense I can try the demo again and explain it better. I did the demo quite a few months ago.

You don't need to stop moving to fight in melee. I would strafe my opponent while charging the attack up (it does more damage when fully charged) and then step in and aim for the head.

You do need to switch to melee mode to fight, however.

GOG doesn't host demos. You could use the one on Steam or you can download it separately here.
