Can I trade my video game for either duct tape or a pretentious piece of music? If not, I suppose Civilization 4, since it's the video game equivalent of someone resetting the clock every hour and making you think you've only played half an hour when you've actually played for 3 months and your family has left you.

Roman5: Definitely Morrowind GOTY edition
This seems like a good choice. Although since I much prefer shooters, I'd probably go for something like STALKER (probably SoC with LURK installed, for maximum dynamicism and replayability).

I've also spent copious amounts of time with both Doom and AvP Classic 2000, so either of those would be good too.
I'd say something like Terraria or Minecraft... the kind of free form games that, given enough free time and boredom, you can pull out some crazy stuff with ;-)

Half serious. Tropico is a great game with a good amount of replay value. I probably would take a more complex game than Tropico, though, if it was the only game I could play for the rest of my life. So my completely serious answer is Civilization IV Complete.
Definitely some roguelike, probably Dungeon Crawl Stone Soup.
Morrowind, easily. My second-favorite game of all time and it's pretty much endless. I have put probably 500 hours into it and there are still things I haven't done like the Imperial Cult faction.
