I use Windows 8.1 and haven't had any trouble. You may want to check the game's page to make sure but I think all the games that support 7 now support 8 and 8.1?

Thank you for your attention. I have windows 8, and i know the games are compatibles with it, but if i update to 8.1, will i have a problem?

The ones that use DirectDraw you are going to have issues with performance. They removed DirectDraw support completely in Win8, and it's done through emulation. Very slow.

Windows 8.1 is not listed in the compatibility cards, and from what I understand of WIndows 8.1 it should not be an extra problem but I'm still in W7.

I'm pretty sure that list is wrong (may not be MaGog's fault I hasten to add). I've played some of those games on 8.1.
Pic is my rig, all 125 GOG games I own play on it. Im running 8.1 - update 2 (media center - update 6)

And there was a fantastic 8.1 update that addressed the DX9 black screen (see original AVP/Shogo/Blood-2 games) issue that was very rare in certain hardware configs. Fun fact Server 2012R2 and can run games really well as its the same back-end as 8.1 ^_^

TL:DR if it runs on 7x64 it will run on 8.1

fancy pants start menu update is long ways off... the price drop when it comes will be really nice

Nope, each version of Windows is listed individually and those are the only ones GOG has officially tested and blessed as working. If a game doesn't list a particular Windows release it is either because it didn't pass GOG's testing adequately enough to get the blessing, or it didn't work at all, or it hasn't been tested yet. One may or may not get a game to work that does not list their operating system version as being officially supported though and it will definitely vary from game to game, might depend on what video hardware you have or what version of the drivers and other factors.

It is a bad idea though to assume "Windows 7 support" automatically means anything else other than "tested and seems to work reliably on Windows 7 so we support that officially". GOG does try to help get games working on any Windows release if possible though or at least point people to things to try in the forums etc. Just be cautious though to avoid headaches.
