I agree, except on the Booker part, primarily because he's a little important to the story. But yeah, Bioshock Infinite as a point & click game? That'd be pretty awesome.

To be honest, I wouldn't miss him. Except for the "big reveal", he merely feels like an adjunct to Elizabeth. Besides, he is kept so much in the dark throughout the whole thing that he feels more like a bumbling fool with the worst luck in the world than anything else. Didn't care for that. At all. >_> In theory, you could still have Comstock without Booker even being involved in the plot beyond that. You could even keep the multiverse angle and just have Elizabeth find out about the whole thing. And this way you could even go for another ending. I could definitely live without the whole "multidimensional suicide pact" shebang, that I can tell you.
I'd love to see S.T.A.L.K.E.R. done in the style of Fallout or maybe Mass Effect in the style of Starflight.

Monster Hunter as a top-down Link to the Past kind of game?
Dragon Age: Origins :D

Heck even Skyrim with the older 3d type dungeon crawlers (where you could hand draw maps on a piece of graph paper).

Well then, I think I'll go ahead and say, 'Demake Pokemon', please. I'd hope that the blanket term I used would erase the entire franchise. If so, I laugh evilly as a billion dollar miserable, unchanging, worthless, and immobile pile vanishes. Then hopefully Nintendo would be forced to design a worthwhile RPG.

The Neverwinter nights games in the Baldur's Gate/Icewind Dale engines. I hated that 3D shitty camera look of the neverwinter nights games.

Civilization 5 back to the Civ 3/4 formula. One unit per hex is stupid.

Dwarf Fortress with Albion-style 2D graphics and a simple mouse controlled UI like in Simcity 2000 would be a blast.

Ok sure, that's not a 'back to basic' example, but it would be a newer game taking hints from older ones ;)
