If you could take any newer game and remake it in the style of an older game, in essence "de-making" it, which would you choose?

For example I would love to see Fallout: New Vegas remade in the exact style of Fallout 2. Or maybe LA Noire in the style of an old Sierra adventure game.

New Vegas would indeed be better in the style of FO2. There was too much boring walking from one empty place to another, and there was too much exposition. If your game is pixel and text based, exposition can be charming. If the game is 3d 1st person action, exposition and empty space are bo-ring.

I'd like to see some so-called scary games in older style. I recently played FEAR 2. While fun as a shooter, the scares were all jump startles. If it was an isometric text-heavy pixel game, it might really creep somebody out.
First thought: NWN2 in SSI gold box format.
All the SSI CRPGs (Dark Sun, Ravenloft, Menzo) after 1993 using the Gold Box engine instead.
Neverwinter Nights games using Infinity Engine instead.
Fade to Black done in the style of Flashback: Quest for Identity.
The Dawn of War games, done up like WarHammer 40,000 Chaos Gate. Turn based a must.
There are so Damn many I'd like to see Demakes of I can't choose But yes Horror games that really play with your Mind A-la (Eternal Darkness: Sanities Requiem) would Be ace!

If I say "simon the sorcerer 3" and "broken sword 3 & 4", do I cheat ?

I suspect there are quite a few old 3D games that would benefit from a de-making into earlier 2D...

I'd love to see Dark Souls done up as a Metroidvania :)
Metroid Other M redone with the Super Metroid engine and the storyline heavily edited or taken out almost completely so we could have the series be stuck on a good note instead of what it is now.

That's a great example. The early 3D of NWN is so ugly compared to the relatively timeless 2D art of the IE games.
