Medal of Honor
System Shock 2
Baulders Gate / Icewind Dale series
Jade Empire
Neverwinter Nights
Hitman series
Thief series
Splinter Cell series
Assassin's Creed
Do I need to go on?
Games that were AAA at some point, a lot.

New AAA games? I think none but maybe some of the $40 games count.

I consider AoW3 quite fitting.

Edit : but that's pretty much it ...and pretty much the only one that matters to me :)

How new are you looking?
For what it's worth, probably the Witcher 1&2. yeah, just about all the games on here used to be. Obscure old games are that way because no one bought them, so you probably won't find many non indie games that weren't at one time considered AAA.

Also, AAA is kind of hard to define. Have any examples?

Tragically very little, which I think if GOG's main weakness, unfortunately.

Okay ... I'm thinking of games with insane production costs, something akin to Hollywoods blockbuster productions. This might not be the correct definition of AAA, but this is what I mean.
If you're only going by production value, then a pretty substantial portion of the catalog is/was AAA on release. Everything Fever_Discordia listed, along with HOMM, (Fallout), STALKER, etc.

Nope, AoW3 doesn't count as AAA by far.

Fever_Discordia: Baulders Gate
Bloody boulders and their gates.

Big budget games would include:

Brutal Legend: approx $25M
Assassin's Creed: approx $20M

Witcher 3 might be GOG's biggest when it arrives source

Fenixp: Bloody boulders and their gates.
I can NEVER spell that damn word right!
Maybe I should go back to banging on about how good BoulderDash is, like when I was 12!
Red Faction was a fairly big release. More on PS2 than PC, and the second one was released over a wide range of platforms. It probably counts.
Sid Meier games probably count, as well.
Others most likely include:
Sim City.
Alan Wake.
Legacy of Kain.
