You might also give AIMP2 a spin... It resembles Winamp in quite a few ways, yet does things in a far, far more convenient manner. And it's more lightweight, which is always good.
For the videos : VLC. Hands down. WMP is so bloated it gives me the creeps just thinking about the waste of resources.

foobar2000 - because it's fast, it starts as soon as i click on the shortcut unlike Winamp and any other music player that I tried.
For video I use Media Player Classic HomeCinema (from the CCCP package) again it's fast, it has a straightforward interface and DXVA for HD videos.

MediaMonkey is what I used to use back when my music was a mess, and it did a rather good job of cleaning it up for me into a file structure I liked. But Winamp is the best music player I've ever used, and I would be surprised if I found one I liked better.
EDIT: Also, I use Tag&Rename for all my tagging after ripping with EAC - actually, that program can handle managing file structures pretty well, but I don't know if it could clean up multiple locations/drives all in one go like MediaMonkey might be able to.

I'm using MP3Tag for mass tagging. Don't be misleaded by the name it supports formats from AAC to WavPack. Haven't come across a better one yet.

i'm using Winamp when i'm on MS Windows, and rhytmbox or amarok on unix/linux.
VLC is great for videos on both platforms.

Im using russian AIMP2 (yes, it IS in english) and so far its the best media player I have stumbled upon. May not suit your needs thou.
