I was gonna direct you to the wishlist, but I figure you mean "what do you guys personally most want" so I'll say:
Vietcong (Oh, goodness in Heaven, yes)
Crysis (ditto)
Army Men (just assume I religiously exclaim for all of these)
Aliens Versus Predator 1&2
Quake (mostly one, II works fine on my computer)
Grim Fandango
Delta Force games in general
FEAR
Panzers Phase 1&2
Men of War series
Close Combat series
Old SSI strategy games
Medieval II Kingdoms (the DRM keeps me away, as usual)
Wolfenstein (the 2009 one, and I would not exclaim for this one)
Just about anything made by id and Raven Software (I cannot express how sad it is that they basically make DLC for CoD anymore)
And Mount & Blade on principle (I'm pretty sure there is no DRM on the CD, but it feels like it would just make sense here)

Darilon: Age of Mythology
Recettear
Very much these two (forgot about them).
Back when I still used my Steam account I had the demo for Recettear and liked it.

Out of curiosity, is this a problem with a solution?

Thought I'd upload some screenshots of the games I mentioned, only because when someone mentions a game I do not know I always appreciate an attached screenshot or a mobygames link

Bladerunner; Heavy Gear 2; Outwars; Gallactic Battlegrounds; Battlezone

Vitek: Good games.
Can't argue with that.

Doom
Doom 2
Heretic
Heretic II
Hexen
Hexen II
Gods
I'd like to see ShadowCaster and The Legacy: Realm of Terror on our site :)

I have a rare English, French, German copy of The Legacy that I desperately want here so that when people read me talking about it, they'll understand what I am talking about. I don't mean the older generation but the younger peeps that want to play older games but might not know about it as it was a hidden gem back when it came out.

ShadowCaster I want because a) it's got that old school Origin magic b) I have a rare (AFAIK) hintbook in excellent condition that wasn't made by Prima or any other third-party that I want to scan and share with you guys (if it gets approved) c) the game is awesome: you play a shapeshifter and each shape plays differently :)

Several, but the ones that come to mind are:

Retrovirus (an indie game similar to descent)
The Serious Sam HD remakes as well as Serious Sam 2 and 3.
Glare
Quake games
Doom games
Valve games like Half-Life, Portal, etc (that would be a miracle)
No One Lives Forever

HD remakes of old games that better support modern hardware and resolutions, in particular Twinsen's Odyssey (a.k.a Little Big Adventure 2), were such a thing to exist.

Ixamyakxim: I'd love to see Pirates of the Caribbean - I don't remember if it had a subtitle or not. The one I want isn't some stupid movie tie in it was actually a rebranded Sea Dogs 2 (to tie in with the "new" movie coming out). I played it on Xbox, it was buggy as hell and actually ate more than one of my saves but it was, dare I say it, the best pirate RPG I've ever played. Upgrades were great, character progression... great, fleet and ship building great, officers system grea... well you get the idea :)

This is in addition to the "big" games I've already voted for in wishlists. I thought I'd toss this one here rather than put up my larger wants.
I loved that game! I actually pirated it a second time on my WinXP computer and got pretty far, but then I lost all my gold and couldn't reload with it so I gave up.

Excellent atmosphere of the islands and fantastic music.

You've got my (and hopefully Jeff Skalski's) support, if EA does still have the rights and Raven didn't take them back.

megarock58: Mechcommander 1 and 2
(drool...) Also, you forgot one judging by your avatar (i think) : Full Throttle
Many threads on that. But I don't mind repeating :

Jeff Wayne's War of the World.

A cool looking RTS with a necessarily awesome soundtrack.

Sheep Dog 'n' Wolf

A Ralph Wolf (versus Sam Sheepdog) simulator. You know, that other series by Chuck 'Road Runner' Jones.

Majestic Chess

A chess game program and tutorial/academy structured as an adventure/rpg game.

Martian Gothic

Some sort of resident evil on mars.

Aliens: A Comic Book Adventure

An adventure game version of Aliens.

Rock of Ages

A stylish indie roll'em'over.

Psi 5 Trading Company

A very old and old school space crew management (the ms-dos ftl).

From dusk till dawn

A very crappy-looking videogame sequel to the movie, but heck, it takes place on a boat. So.

Jaws Unleashed

A fantastic munchathon, feeling like an underwater carmageddon.

Shells of fury

A ww1 era subsim. Aren't you tired of those fully functionnal ww2 u-boote ?

Hard to be a god

An RPG set in a medieval world where you have to conceal or use wisely your super high tech scifi equipment. Adapted from the Strugatski brothers, the ones who also wrote Stalker.

Hammer & sickle

Cold war espionnage turn-based shooter.

and [url=http://www.gog.com/wishlist/games/sinking_island]Sinking island

Benoit 'Syberia' Sokal's more recent adventure games.

Evochron mercenary

Awesome and gorgeous indie Elite-like.

Crimson Skies

Steampunk flight simulator with biplanes and dirigibles.

Starship Titanic

Douglas Adams' adventure game. Hitchhiker's guide of the galaxy logic and humour.

The colonel's bequest and The Dagger of Amon-Ra

Sierra-on-line's sleuthing adventures.

Shadow of the Comet

The only faithful Lovecraft-based adventure game ever.

Nosferatu

Terrifying random-generated gothic FPS

Death to Spies (series)

Smersh-based hitman-like, way better than hitman.

Creeper World (series)

Indie physics/towerdefense-ish tactical game pitting you against a liquid mass.

Warblade

Best space invaders retro-remake ever.

Aztaka

A decent side-scroller, set in a refreshing aztek/inca mythological setting.

Dark Corners of the Earth

An excellent, genuinely lovecrafty, FPS. Lovecraft-inspired games that do actually feel Lovecraft are too rare.

Frogware's Holmes series in general

Good sleuthing adventure games (too rare a genre), and gog already has the first good game of that series.

All of them, of course :)
GunMetal. Not the one by Rage, but the one by Mad Genius Software.

Vangers, a VCS with very strange vehicles and gameplay.

RealMyst Masterpiece...

Mordor: The Depths of Dejenol, a rather classical windows dungeon crawler.

Stars!, an early PBEM 4X game.

Pop! The Balloon Dog, a VERY obscure isometric platformer. I mostly want this so people can know about this title.

I'd keep searching for my own wishlist entries, but there's no easy way to find them.
All the games I've voted for in the wishlist. It's a pity one can't filter wishlist to see what has he already voted for.
