TheTonyOne: Star Ocean: The Second Story. Pity the PSP version is so much better.
I NEVER was able to play this game. I was a PC gamer at this point and only played my PS with friends or far after the fact... and by the time I bought Star Ocean I had a PS that REFUSED to play dual layered discs (from what I recall SO being one of the first?) - it would ALWAYS freeze up at the same point, about 10 minutes into the game. I bought and returned 3 copies of Star Ocean and to this day it bugs me that I was never able to play this gem :(

*edit* Or maybe this was the PS2 version - End of Time? Hmm now I forget... whoops!

Castlevania SOTN. Such exquisite game.

Metal Gear Solid.

FF7.

Crash Team Racing.

Damn so many good memories.
This might e a little off topic, but almost everyone I knew growing up owned an N64, SNES, Sega Genesis, or some combination of them... and the PS2 was out for some time then...
Out of what I've played:
Spyro 2+3
The Legend of Dragoon
The Legend of Legaia
Final Fantasy 7
Ape Escape
Tomba 2
Army Men 3D
Megaman Legends 1+2
Tony Hawk's Pro Skater (Toss-up between 2 and 3)

Til the End of Time on the PS2 was terrible and completely invalidated the two games that came before it. (Three if you count Blue sphere on the GBC, but that never came out here.)

MEGA SPOILERS BELOW THIS POINT

It turns out Sqaure Enix probably messed with the plot, as it turns out the entire universe is an MMO run by the SPHERE company. Square. Sphere. Seems a little too shapey to be coincidental, but I AM a paranoid nutcase.
A good topic!

My favorite for PS1 are...

Gunparade March ( The top one of the all times. Was this game ported in the US or EU?)
Metal Gear Solid
Policenauts (Kojima's other great game)
Xenogears
Tenchu 1
Giren no Yabou
Panzer Front bis
Genso Suikoden 2 (in the west, was called Suikoden 2)
Brigandine
Soldnerschild Special (Actually I enjoyed this game on Sega Saturn though)
Megami Ibunroku Persona
Machi
BioHazard 1 (In the west, Resident Evil 1)
Silent Bomber deserves a mention. Dumb story, spectacular gameplay.
Klonoa: Door to Phantomile will always be one of my favorites. It's gameplay alone would of been enough to make it worth playing, but it's slightly surreal dream-like atmosphere and incredible soundtrack turned it into something amazing. Just a shame it was so short.

Other favorites:
Metal Gear Solid
Crash Bandicoot 2: Cortex Strikes Back
Spyro: Year of the Dragon
Ape Escape

Also Oddworld, Rayman and MDK are all great, though they're also on PC.
Tomba (Tombi) 2: The Evil Swine Return
Pocket Fighter

Kudos the_atm for a great thread I was definitely a Playstation kid as well. The PS1 had a huge influence on me because it was giant leap in gaming compared to the previous gen systems unlike the current small leap from PS3 to PS4. Seeing everyone else's list bought back a lot of memories of amazing games I had forgotten. So here are my favorites in no particular order:

Resident Evil 2: I never played Resident Evil 1 so this was my favorite of the series. I remember sitting on the floor playing very late one night when everyone else was asleep and at one moment when Leon fell through the wooden floor it made me jump atleast a foot in the air, great times.

Silent HIll: A great intriguing mysterious premise in an unsettling and eerie town, this was the first time I really took notice of the environment and setting in a videogame, the original Silent Hill still has the best story of them all. I still remember the awesome chilling moment in the school where the disconnected phone rings and when you pick up to hear Cheryl calling out for you. Also the piano puzzle had me and my friend stumped for days until we finally worked together to figure it out. I got the bad ending at first because I didn't collect the blood which was needed to save Cybil so I had to replay the game again but it was well worth it.

Crash Bandicoot 3: Warped This was the first 3D platformer that I played I was blown away by how much fun it was it also made every other similar game pale in comparison at the time. There were all these great characters in the game and it felt like playing a well done animated movie. This was my first taste of Naughty Dog's work and back then I had no clue how consistently great they were going to be in the years to come.

Driver: Hands down the most fun I had playing a car game, the game looked like crap on PSX but it was so much fun to play. That opening driving test was a real bitch must have tried atleast a dozen times before I passed it. I used to love drifting on corners then immediately using a burnout to speed up and not to mention smashing the other car during a chase.

Syphon Filter Trilogy: Yes, I played and enjoyed all of them and hearing "989 Studios" when starting up the game always got me pumped for what was about to come, since I hadn't played Splinter Cell Gabriel Logan was my favorite operative. This was the first time I noticed the voice acting in a video game and Gabe Logan's husky voice just made the character. The standout moment for me was in Syphon Filter 2 when I had to take out two targets with a single shot using the sniper rifle which made me feel like a real bad ass. Also I never got tired of Gabe saying "Lian" over and over again. :P

Bugs Bunny: Lost in Time: Bugs Bunny is and forever will be my favorite Looney Tunes character and this game just nailed it. It had almost all the characters from the show squaring off against Bugs and my favorite was the one with Yosemite Sam on the Pirate ship. It had everything you could ask for including driving sections in some levels to break up the gameplay and equally well done, I loved it so much that I almost 100 percented the game by collecting all the carrots.

Tekken 3: I always preferred Tekken over Street Fighter (probably because I suck at it) so this is the fighting game that I have played the most. Its no wonder that I was the best among my friends so I was able to play well with a lot of different characters. I really hated Eddie though with the cheap one move game that peopled used really pissed me off.

Crash Team Racing: I had never played a cart game before this and boy did I enjoy the hell out of this one. I still recall the elation I felt after the first time I was able to dodge a homing missile by turning around a corner and making it hit the brick wall when playing mano a mano against my buddy. Those death matches really got tense sometimes but it was great fun to come out victorious when you only had one remaining life left.

Spiderman 1 & 2: These games were just fantastic and at the time were the benchmark for how superhero games should be done. It really made you feel like you were spiderman with every spidey move in there, I used to enjoy sticking the web on the goons and pulling them towards me to beat the crap out of them, so much fun.

Metal Gear Solid: I will use an oft used cliche for this game but for me it truly was a game changer. From the very opening of the game where Snake is infiltrating Shadow Moses Base while we get a Hollywood movie style opening credits ending with the main title when Snake reaches the lift, I knew this was going to be something really special. But, what I did not expect even tough I had been playing games for a long time was that a game could actually play me as well. The Psycho Mantis boss fight is hands down one of the best moments in video gaming, I remember how shocked and frustrated I was with this boss reading my every move along with the games from my memory card. Another memorable moment is the Sniper Wolf battle which required taking pills to steady Snake's shaky hands to make a shot. Snake smuggling in cigarettes in his stomach and then using them to go through lasers undetected. Finding the frequency on the back of the CD case to talk to Meryl. All in all you can tell by my avatar how special this game is to me. :)

stg83: Metal Gear Solid:
True! Metal Gear Solid is pure genius, and we share the same thoughts on it! I laughed hard when Psycho Mantis repeatedly broke the fourth wall, and the sniping duel was outright epic! Not to count all the other clever boss battles... Along with its equal in age Thief -although they are very different- it invented the stealth genre, and they both remain two of my favourite games of all time.

NHL '99. It was the definitive game for me. It had awesome real-time commentary (for the time), great player movement and somehow Ice Hockey just works perfectly on a console.
