While I enjoyed the combat in ME even though third person shooters aren't something I typically play (I haven't owned a console since the Nintendo 64, so I don't normally play 'consoley' games), I was more interested in the story, the neat environments (I loved being on The Citadel), and most especially, the interactions and dialogue choices with the NPCs. A few RPG's have done a great job of providing interesting dialogue options over the years, but Bioware (especially the Bioware of old) seems incredibly keen at being able to provide very interesting and creative ways for players to interact with the NPCs.
I felt an almost real connection between Commander Sheppard and the main NPC's throughout the ME series, and that, in my opinion, is something that only some of the best games ever made have been able to do. Even some of the most enjoyable RPG's to date didn't provide that kind of unique character interaction, though they may have had a great story, or great stat-based character development, or great combat, or all of the above - but not necessarily the capacity to really make you feel an almost lifelike connection between your character and the NPC's.
Maybe it's hard to explain, and it's probably not something everyone that plays the ME series is going to feel the same way about. For me though, that's what sets ME apart from the rest.
