A fun change is Orc only weilding 2-handed weapons, no alchemy, no magic, no scrolls. Just smithing, enchantment, and brawn. Use the Alternate Start mod to start life in one of the Orc holds. Macho Man your way through dialogue and choices. Choose violence and strength whenever possible. Don't adopt any human chlldren. Don't pick locks. Although a lock bashing mod makes it fun again.
So, when I saw the title of this thread, I lol'd. In fact I have chuckled now several times as I've scanned past it, reading the list of threads...SO it was clear that I would have to put my two cents in, no matter what the ACTUAL op was about.
I definitely have a few thoughts on builds, but for now, i'll just comment that it's a good thing snowkatt is here; otherwise I would've had to have found that youtube link myself! +1 snowkatt!

Play as a vampire.
For my longest game in Morrowind I played as a female axe-wielding Nord.
I specialised in bashing people's heads in but also used a bit of magic. I had a lot of fun when visiting Solstheim, I felt right at home.

So (for Morrowind) I tell'ya to leave your sneaky ways behind, grab an axe and storm out there!
Play as a staff wielding old argonian who has no intelligence.
On second thought, if you play a vampire Khajiit, well... you are a vampire cat...
And if you:

Funny that this got brought up, was just thinking about it the other day. I started a new characters in New Vegas and told myself, 'this time this guy's gonna be a stone cold killer. He's gonna slaughter every person in New Vegas that he comes across, and trade their skins like beaver pelts. Yeah, he's gonna be bad-ass.'

Three hours into the game and I'm already helping out the NCR and doing nice fetch-it quests for nice old ladies. Something's wrong with me. I can't let my Machiavellian urges out... not even in a video game. I want to be bad, I really do. But then someone asks me if I'd help them restore the solar panels at HELIOS ONE... and I'm like, 'Ok. Why not?'

Damn you, RPGs... You hoodwink me every time. The tail is wagging the dog here.

Just kill them after helping them. :)

Why not just play it like you're white and nerdy?!
Apply "rollin' " in a literal way:

Pull out your D20 and roll the die to determine the results of each character generation choice.

LOL I just rerolled in NV as well. I decided to be a hand-to-hand douche hammer and punch everything I saw. Be a guy (I never play guys), follow Caesar and kill every NCR trooper I see, cause I've always hated the NCR, but my "questy do-gooder" nature kept making me good with them.

Needless to say, the NCR elite came knocking on my door telling me to shape-up or I was gonna get ganked. I then punched her in the back of the head. It was awesome!

I punched a deathclaw. Once. I died.
Currently, I'm playing a light armor meele/mage build, and I'm enjoying it a lot. Not sure about precise skills, but I do know that I use light armor to increase mobility (note that I'm playing Skyrim, so Light armor provides significantly lower damage reduction yet much higher movement than heavy - dunno about vanilla), destruction magic in one hand and a long sword (to get decent attack speed) in the other. The character is a glass canon, dealing massive amounts of damage over short periods of time, but dying in 1-2 hits from a bigger weapon. It takes a lot of dodging and running around to play this way.
