However if you buy the game on Steam, you could also get a copy of it on GOG.

GOG is not Steam Key reseller so none of the games on GOG comes with Steam Keys. If you buy from GOG you get to download (directly using browser or using GOG downloader) DRM-free and Steam free installer you can install anywhere with or without internet connection.

So if you're looking for Steam key's, GOG is the wrong place to look.

GOG is Steam's foremost competitor. You will have to download the game from GOG.com either using your browser or using GOG's downloader if you buy the game here on GOG. However the good news is that all games on GOG.com are 100% DRM free so you should be buying games on GOG anyway.

Yes you can redeem your Steam (or retail I think) copy on GOG on this page.

Edit: And since you just edited your post, no it's just The Witcher 1 and 2 because CD Projekt owns GOG.
