A couple of my absolute favourite dishes, vegetarian or otherwise, are okra & potato stew or simple butter-cooked steamed broccoli. I could gobble that stuff 'till the wafer-thin mint.

htown1980: Not in but have been vegetarian for many years now. I would say some of my favourite recipes are:
Channa Masala (chickpea curry) - super easy to make - onion, can or two of chickpeas, can or two of tomatoes, add pumpkin and/or capscium if you like. Add spices (turmeric, ground coriander, ground chili, salt, ground cumin). cook for 20 minutes. add garam masala, cook for 10 more minutes. Serve with rice or couscous.
Roast Cauliflower Pasta - roast some cauliflower (after seasoning), cook some pasta. cook some garlic and rosemary, add cream, add some parmesan. combine the pasta, the sauce and the cauliflower. add some more parmesan and cracked pepper. voila!
Haloumi salad - couscous, capsicum, spring onions, coriander, haloumi (cooked). mix it up. dressing is lemon juice, olive oil, paprika, lemon rind, i think that's it. add the dressing to the salad, stir, eat, delicious.
Anything with haloumi is good - put it on pizzas, burgers, etc.
I good easy stir fry sauce to go with your favourite veggies and tofu is just a combo of sweet chili sauce, soy sauce, pepper, throw in some veggie oyster sauce if you wish. delicious.
So much good vego food out there. Mexican, asian, indian, pasta, pizza, etc.
I'm hungry.
