On topic: I'll also say Don't Starve. Haven't been surrounded by monsters so far, but I haven't played that much of it either.

well since someone already mentioned Starbound , which btw is helmed by the guy the creator of Terraria brought on to do some of the sprite work on the 1.1 update and left to start work on Stabound when work on new content initially stopped which makes me wonder if the four guys he hired to help with the forthcoming 1.2 update will go off to make their own Terraria style games?, so I will throw out Edge of Space which like Starbound is a Terraria inspired 2d sandbox style game. some gameplay from the Beta http://www.youtube.com/watch?v=t1eHIPHyLlk
tinyE: BTW that Loop Zook video wasn't nearly half as silly as the average stunt in your average Jason Statham movie.
JMich: Yes, because that was a successful Loop Zook. Think of all the people who saw it and found it a good idea, then tried to imitate it. Or do it with a sniper rifle instead of a bazooka.

Yeah I been playing it for a few months now and you really don't get swarmed by monsters unless you say attack a giant nest of spiders or attack a beehive at most you only have to deal with one or two monsters and those are not that common. Well save for the set hound event that happens after your first X days in the world and Adventure mode but adventure mode is meant to be hard and the game warns you first and if you go into adventure mode through sandbox and die you just go back to your Sandbox world .

Aside from many of the games mentioned, I'll add Under the Ocean and it's freeware predecessor Under the Garden and the upcoming (more focused on crafting/harvesting than survival by the looks of it) Stardew Valley.

Thanks for all the sugestions until the moment people, certainly will try some of them
And will leave my own suggestion of game (not played because is in development yet), the crafting is more base building-based, but had a survival part: http://www.kickstarter.com/projects/1317934609/forsaken-fortress

Timber and Stone.
Still waiting on my email but after all of the pre-order emails go out, it'll be available to buy for an undetermined price, probably later tonight.

Seconding Under the Ocean, which sounds a lot like what you would like.

Thirding or fourthing Unreal World. The 3.16 installer was just updated to v3 in the last week, btw. Installed again a few days ago.
Still in the free to play mode, donations appreciated.
The LARP-like quality of the in-game images was a bit of a turn-off at first, but they've grown on me.

I was thinking Skyrim is a good candidate for something like this if someone manages to remove all NPCs and houses and expand the crafting system to include things like shelters

Oh, that's a nice list. I like the Terraria clones or spin-offs. Pity most of them are in early alpha.

Don't Starve is reeeeeeally good. Enemies are definitely less common than in MC and Terraria, especially early on.
