Must have game(s) would have to be any in the Fallout series. Kind of a sore subject on GOG these days but if someone still doesn't have it and they like rpg's, Fallout is pretty awesome.

What about tycoon games, these ones here are the best ones ever developed, like Theme Hospital, Roller Coaster Tycoon series, etc. I think everybody should try it.

Thanks everyone for the suggestions, I didn't want to take personal taste into account, trying to understand which titles should be played kinda regardless of one's likings (like some books, that should be read no matter what).
Right now Planescape: Torment is the most voted, and that makes me really happy, since I bought it with the D&D promo, and it's the next one I'll begin =P.
I'm also glad I played several of them, so I'm not *that* lacking, after all.

Oh, if you are curious, I'd say Monkey Island 1 & 2: the second is probably my favourite game, but it has no swordfight!

I think I'll restrict myself to GOG, and say that any gamer, regardless of personal preference, should own Under a Killing Moon. Simply the best Adventure game of all time.
I'll be in, if only for killing some time.

And the game is of course Deus Ex. Anybody who hasn't tried it deserves to be publicly ridiculed by yours truly.

hmm... Games every player should try depend on interest /genre. I am presuming you mean PC games, else we should mention Mario & Zelda games, Ratchet & Clank, Spyro 3, Final Fantasy series, Okami, Kingdom Hearts, Ico, Chronotrigger...

Well worth your time in the adventure game category: Zork games (esp Zork: Grand Inquisitor), Sam & Max (all), Monkey Island games (all), Day of the Tentacle, Myst/RealMyst & Riven, Syberia 1 & 2, Broken Sword 1 & 2, Journeyman Project 2 & 3, Freddy Pharkas, Eric the Unready, Discworld games (especially if you are a fan of the books), Starship Titanic (ditto)

Civilization (any), Plants vs Zombies, Bejeweled, Chuzzle, Portal, Portal 2, Puzzle Inlay (series,) Bookworm, Pandora's Box, Hoyle solitaire, mahjong...

But as for me, I am going to be contrary today and say the Nancy Drew series.

The Simcity series are a must-have, barring the latest one released by EA. Hours of fun building up your cities. In a slightly different vein, Banished, recently released here on GOG, hits all the right spots for a builder game.
