Pirates of the Carribean (the first three, if allowed). Had been planned as a trilogy for some time. Story-wise it's a trilogy to me, although I love the fourth too.

For PC games it's Age of Empires. Maybe not really a trilogy, but each installment covers different era, so it's close to a trilogy if not is a trilogy.

Someone already mentioned The Sims, and I don't like/haven't played the third one anyway.

The UFO series (Aftermath, Aftershock, Afterlight) make a good trilogy, although I'd have to think on it quite a bit before I'd say they were THE favorite.

Games: Spellforce && Spellforce: Breath of Winter && Spellforce: Shadow of the Phoenix

Music: From Halo's 3 Soundtrack I find the following sequence of three songs amazing, especially when you consider the story the titles form: "This is the Hour", "One Final Effort" and "Finish the Fight". I find the fact that I have never played a Halo title a testament to how powerful the songs are.

My favorite trilogy has to be: Back to the Future. Its humor, the attention to detail and story has me coming back again and again. And book-wise I'll "cheat" and go with The Hitchhiker's Guide to the Galaxy (a trilogy in five parts), but as I've already specified the above movie trilogy as my favorite, this is more of an extra. :-P
