Is there a way to add sales items to a Cart instead of Check-Out Now?
For example: http://www.gog.com/promo/library_of_myst

It would be nice to be able to add several of these to the cart and them check out once, instead of having to check out for each bundle individually.

You can go to the individual page and add to cart. If you add the complete promo (or at least the ones you need to complete it if you have some of them) it will take the extra percentage off at the end.
