There's Sacrifice spell in King's Bounty: The Legend that belongs to Chaos Magic school. You can sacrifice one of your troops to another troop, which will gain a number of creatures proportional to the health taken by the sacrifice.

Heroes of M&M III's Altar of Sacrifice has been mentioned before but I add a bit:
Altar of sacrifice

The altar's function depends on your hero's alignment. At the Altar, if you are Good, you can sacrifice only artifacts; if you are Evil, you can sacrifice only creatures; and if you are Neutral, you can sacrifice both. Your hero receives experience points in return.

Normally you would not sacrifice troops but usually there are artifacts you do not need so Evil aligned heroes are at a disadvantage. A hero's alignment does not change if bought in a differently aligned town. Buying an Evil hero in a Good or Neutral town does not help.
In Rome: Total War you can sacrifice peasants, sometimes for the sake of it and sometimes for some tactical reason. Anyways, I've considered building a massive peasant army and seeing how that goes--based on what I've read, that won't go well.

Also, in League of Legends, you can sacrifice yourself and sometimes your "ultimate" to save a teammate, and there's also of course the minions that you sacrifice to turrets, enemy minions and champions.

In Quest for Glory 5 you have the option to sacrifice your life (some of your vitality in fact) to bring a character back from Hades. You can also offer to sacrifice yourself at the very end when battling the dragon.

The Grinder! I loved Yuri as a race in RA2 YR but they were quite imbalanced as I recall.

In Mount&Blade: Warband you have to leave some soldiers behind in order to flee from a battle and possible defeat and capture, this noble ones will lay down their lives so you and their mates keep fighting another day, I play without the option to save the game myself so every decision counts, sometimes is hard to sacrifice fellow warriors for a bad course of action I took. (also your troop's morale will go down)

In the Disgaea games, you can sacrifice all the xp levels you have earned to reincarnate back to level 1 in order to switch classes and improve your base stats.

There are situations in FTL: Faster Than Light where you might need your brave Mantis warriors to go down with the enemy ship. In fact, I think one achievement requires such a sacrifice!
