I would suggest that you stick to some of your favorite classical pieces but played by a different orchestra, conductor or time periods - it makes a huge difference.

My favorite composers are Wagner and Arvo Pärt.
Someone already mentioned The Planets, so instead I'll mention another of Holst's works: the Moorside Suite, a piece of music featuring the brass instrument known as the euphonium.

My favorite piece is Stravinsky's Rite of Spring. However, if you are looking for a piece to lower stress during some sort of crunch period, this is not it. After all, it did cause riots when it was first released.

Not sure if this has already been suggested but I love Beethoven's 6th Symphony.
Not really classical maybe, but I liked "The Chairman Dances" by John Adams, which was used in Civilization IV.
As already mentioned, "The Planets Suite" by Holst is one of my favorites too.
Richard Wagner's Opera's have excellent music, the "Tannhäuser Overture" being my favorite and if you're going that way you want to look at the Russian composers as well, like Borodin's "Prince Igor" for example.

Well I'm working right now with Schumann's symphonies on, and it pumps you full of energy! Especially the symphony n°3! You might wanna try it by Leonard Bernstein/Vienna Philharmonic, or Wolfgang Sawallisch and the Dresden Staatskapelle. Both should be available on deezer or such.

Beethoven - Piano Sonata No 14 (Moonlight)
Dvorak - Symphony No 9 (From the New World)
Gershwin - Rhapsody in Blue
Mozart - Piano Sonata No 16 in C, K 545 (try to find a recording by Mitsuko Uchida and listen to all three movements!)
Pachelbel - Canon in D
Vivaldi - Lute Concerto in D Major RV 93 (the second movement is especially lovely)

For the person asking about Harpsichord... I enjoy the Harpsichord Sonatas of Domenico Scarlatti.
