Salsa_Shark: This is a long shot but has anyone seen an anime about a wizard type guy who has a girl and an apprentice following him around. I only saw one episode but the apprentice was supposed to light a rock on fire but he accidentally lit charcoal on fire. There was also a cave-in i think.

davidheinemann: Sounds vaguely like Howl's Moving Castle, but that was a one-off movie.

No that's not it. I think it used to be on cartoon network.

haydenaurion: Princess Mononoke

Ah, Mononoke, that's just pure work of art. Didn't like Perfect Blue all that much thou, seemed like something... Well... Dunno. Then again, I only watched the beginning.
Ah, also, Jin-Roh: The Wolf Brigade is pretty damn awesome. I have watched it about 3 times now.

I really need to see all of these, espically the Satoshi Kon movies. I was kinda dissapointed by Paprika though.
I watched this movie in japanese class and thought it was pretty good.
Nausicaä of the Valley of the Wind.
The answer is so obvious that I shall open my window and scream it out loud so everybody around can hear:
Tengen Toppa Gurren Lagann
Seriously this must be the most entertaining anime I've seen in years. It's got mecha, great story (which is slow to unfold and goes through multiple climaxes), great visuals (it's made by Gainax), cool characters and a god damn robot that can deliver flaming kicks from the god damn sky. This show is made of epicness, camaraderie and EPIC WIN. Plus it has boobs.
"Digging a hole to pierce the heavens!"
For more mecha you can check out Gundam 00 (two seasons) as it is the best entry in Gundam franchise so far.
For alchemy, mechanical legs and arms, epic story, polearms made from ceiling and flashy muscles check out Fullmetal Alchemist. There are two versions, the older one and the newer one called Brotherhood. I suggest going for Brotherhood directly as it stays true to the manga and so, true to the series' plot as created by it's author.
For people doing crazy stuff, with strong Heroes-esque vibe, nefarious protagonist, awesome visuals and lots of supernatural action check Darker than Black.
There's also Claymore if you prefer fantasy stuff although the anime really sucks compared to the manga.

Nausica of the Valley of the Wind.
Yes, that's a very good one. It was written and directed by Hayao Miyazaki in 1984 before co-founding Studio Ghibli. You should try some other Ghibli movies too - Princess Mononoke (my personal favourite), Laputa - Castle in the Sky, Spirited Away, Howl's Moving Castle to name a few.
as for sci-fi Strain is a good mix of action and drama
Monster- A modern day psychological thriller that is intense until the very end.
Higurashi When They Cry- The first season is a mind screw mystery that gives you various clues to try to put the pieces together. The second season is about resolving the mystery so it is less of a mind screw but still good.
Noien is a good psychological thriller but not as freaky. It takes place in the present day and in an alternative future.
noir and madlax- action thrillers with girls mostly being the main characters. serious shows though.
any other anime suggested may be good for watching.

TheCheese33: Is the Bleach anime any good? I remember reading the first volume of the manga a long time ago, because a friend recommended it to me. I never really felt a drive to continue it after that, though.

It's entertaining if you watch it in a succession like 2 episodes a day but keeping up with it can be less satisfying. The series gets confusing so you have to wait until the author makes since of things. The bounto arc is filler so you can skip it if you don't like it. The plot is not affected by it except for three characters introduced who play minor roles. The captain amazagi arc has no bearing on the story and nether does the zanpaktou arc.

Not even one mention of The Legend of The Galactic Heroes? Jeez.
Just wondering, has anyone read something along the lines of Parasyte/Portus/Noise/MPD-Psycho, and know of any animes similar to those? Basically, mind-fuck/psychological/apocalyptic/Lovecraftian horror stuff?

Try Death Note for psychological. It's pretty close to the Manga though, especially the first half.
