Thats right, I'm stumped. Heres my list of stuff I've seen:
http://myanimelist.net/animelist/ovoon7
I'm not so sure on the things I plan to watch. But take a look at what I like and reccomend me something you think is good. It doesn't have to be like the ones I've seen, just anything really good. I'm not so sure about Ghost in The Shell... a bit too much nudity in the first like 20 seconds. :P
I've heard good things about Mushishi.
So far I really love Evangelion, Cowboy Bebop FMA Brotherhood and Baccano!
So is there anything other than Ghost in the Shell that i've forgotten about watching? I feel like I've seen everything I wanted to see but need more. :P

MichaelFurlong: In GITS the Major spends nearly the entire time wearing a bathing suit . . . . It felt weird watching it. Not quite nudity, but still WTF.

It's a way to improve ratings. They even made fun of it: one time, she fell into trash during a raid, and had to change her clothes. When she reported to her boss, he noted her change of fashion and asked if she was hitting on him. And she was hardly wearing any less clothes than before! I was watching this at night, and I laughed so hard I woke my sister in another room. :D

Certainly starts out that way. Then the story gets muddled up. The visuals stay consistently excellent though.
Ergo Proxy is my favorite thing ever. My avatar is from that show. Its not really for everybody though. I would read some reviews before hand. Then again, its on Hulu right now, so the only thing you would waist by watching the first episode is 25 minutes.
If you liked Evangelion, you should check out Rahxephon. Its one big homage to Eva. I actually liked it a little better. Be warned though, for some reason there are some Eva fans out there that will hate you for even thinking about watching it. I really never got why they get so defensive over the subject. I guess they feel threatened by it or something.
I also enjoyed Last Exile. I never had any problems with the plot. I thought the plot was pretty good. It also seemed pretty straight forward and easy to understand the whole way through. I know that this one (like most of Gonzo's shows) isn't liked by many people quite as much as I like it though, so I guess you can take that into consideration.
The Vision of Escaflowne is one of the greatest anime series ever. Ive seen it on just as many top 10 lists as Evangelion, if not more. The movie was pretty good too, but not nearly as good as the series.
Eureka Seven is really good. Its much less action packed than your average mecha series, but its quality is top notch. Im a huge mecha fan myself. There are lots of great mech shows that I could recommend, but I choose this one in particular because I think it would also appeal to people who aren't mecha fans. I love Gundam and all, but shows like that really don't have too much value to people who don't like mechs or space opera.
If you like air combat, and maybe a bit of sci-fi, Yukikaze is pure awesome.
You can add another recommendation for Planetes. Is one of the rare few slice-of-life anime series that I actually enjoyed. Being interested in the subject matter may have had something to do with it, but I think the great characters was the real reason for it.
The Slayers is a great fantasy comedy show. It can get fairly serious at times, but most of the time its just really fun.
Coyote Ragtime Show is another fun one. I like how half of the main characters are actually adults. Thats pretty rare in anime.
Another vote for Witch Hunter Robin. Its one of my personal favorites. I find the show to be pretty relaxing for some reason. Maybe its the music? Maybe its because its quiet? Im not sure. Its just a great show for me to watch when I need to unwind.
I forgot to mention Spice and Wolf.

Also, Princess Tutu and I'll tell you why. It is a 'girl show' almost to the core, but reaching past that, the series is a fantastic dissection of the fairy tale. If you think you could get past that it's about ballet, it's well worth a look.

I agree. Good for a laugh, just don't take the storyline too seriously.

What's wrong with the squad leader of a capital city's anti-terrorist (and various other roles) paramilitary unit wearing a one piece bathing suit for the entirety of her career? Seriously? It would be like the female characters in firefly wearing bikinis throughout the series.
In a few episodes she is wearing fatigues and a shirt, I wish they stuck to that for the whole thing.

Yea, I guessed that would be the case, but considering the graphics I don't get any bloke who would find that a deciding factor in watching it. It makes it harder to take the T.V. series seriously (those child-like robots made it hard enough).

You have to put into perspective that at that time, the hot new thing is network body switching, and sexual pleasure is really just a sensation that must be synthesized because so many people use synthetic bodies. In a way, full bionic soldiers are just combat dolls with human brain cases in them. How that doll is dressed is probably not that important to most people, and for an operative with a female body piece (oh god, I'm not really writhing this, am I? shit) it can be favourable to be dressed in an erotic way for potential use in persuasion or giving the first impression that (s)he is much less of a threat than she is.
One vote for Code Geass.
Ok, the second season really split the fanbase, you may like it or not. But if you do happen to love it, as I do, it will be one of the best anime experiences ever.
I think it's worth a try.
Besides my fanaticism to One Piece, and according to your list, I would recommend you Samourai 7 (26 episodes).

Its japan. She is a cyborg.
Nothing wrong.
IIRC she dresses more appropriately in 2nd gig.
