I'm not so sure on the things I plan to watch. But take a look at what I like and reccomend me something you think is good. It doesn't have to be like the ones I've seen, just anything really good. I'm not so sure about Ghost in The Shell... a bit too much nudity in the first like 20 seconds. :P
I've heard good things about Mushishi.
So far I really love Evangelion, Cowboy Bebop FMA Brotherhood and Baccano!
So is there anything other than Ghost in the Shell that i've forgotten about watching? I feel like I've seen everything I wanted to see but need more. :P

One Piece! avoid the dubbed versions though.
It's different to the stuff you mentioned you've already seen, but One Piece is awesome. Worth a try to see if you like it.

I am One Piece whore and I am also recommending it. 10 movies 3 tv specials and almost 500 episodes may scare you a bit :D

Practically the only time you see something remotely nude is at the beginning of the first movie. The second movie has a more "barbie" approach to nudity, and the third I think is clean (just saw the first part of it). The stand alone complex series are really sterile, and you hardly see anything without clothes. But anyway, GITS is great, if you like something that stimulates your brain while giving you a back rub.
Other than that... I think all the best ones are already recommended, so I have nothing new to add.
Mushishi is one of my favorite anime, so I definetly recommend it. If you end up liking it, I also recommend Kino's Journey, which is a bit similar in some ways.
I've recently watched Aria the animation, and despite not being part of the target audience at all, I have to admit that I found it to be very enjoyable. Not sure if you'd like it though.
Other than that, maybe The Twelve Kingdoms (early episodes aren't that great but it gets better) and Excel Saga for laughs.
And Ghost in the Shell. You really need to at least watch the Stand Alone Complex series.
I've now watched up episode 10 (in between doing an essay) of Gurren Lagann and it is really awesome! I'd totally recommend that.
I recently started watching Soul Eater on Hulu, and been enjoying it a lot.
There's no Berserk on your list, you must add it!

I don't watch much new anime because I am put off in the general direction it has been going but here are some older ones. Gungrave, Escaflowne, Blue Gender, GTO, Scryed and Witch Hunter Robin.
On a side note while I'm here how are Black Lagoon and Code Gaess? Heard they were gems and haven't gotten around to picking them up.

I'm no anime buff, but I think you should move studio ghibli stuff higher on your list. It's not traditional, but it's good. Howl's Moving Castle is a really good film.
Apart from that - I quite liked the Angel Sanctuary films, while there was a slightly (ok -totally) incestuous plot, but it had angels and lucifer in it, always keeps things interesting.
EDIT: looked again - you've done Howl - move Spirited away up the list though.

The number is just the placement, not the rank. I gave them all review scores if you look. I gave Howl a 1/10 because I really don't care for it (actually would be a 7, but it needs to be lower on the list of top anime. It's like rank 15.)

Both are awesome though Code Geass goes in a different direction second season. I heavily recommend Black Lagoon especially. It has a really great dub.

In GITS the Major spends nearly the entire time wearing a bathing suit . . . . It felt weird watching it. Not quite nudity, but still WTF.

Outlaw Star This puts me in mind of the Golden Age of science fiction, with crazy characters, crazy silly plots, but a whole lot of fun along the way.

Planetes Speculative science fiction disguised as a slice of life show that is probably one of my favorite.
Kino's Journey A woman on a journey with a talking motorcycle. She only stays in one place for 3 days before moving on. Why? Watch to find out. ;)
Azumanga Daioh A teen slice of life comedy. Usually I pass on these, but this one I find hilarious. It's like if Seinfeld was an all-girl cast.
I'd recommend checking out the reviews here (especially JO Anime Review), for recommendations. It led me to getting several listed here. Spoilers though, as they're fairly detailed review.

If you're interested in animated shows in general and not just Japanese anime, I'd also throw in Batman: The Animated Series as well as Justice League: The Animated Series and Justice League Unlimited and Animaniacs.
