Most of the games I would suggest probably never saw a US release, so that leaves me with three that I know did:

Ico
Shadow of the Colossus
Dark Cloud 2
Shadow of the Colossus.

That's the reason I bought a PS3. Sold it a year later. :)
Everyone's hit on most of the must plays. Some of them are going to be nearly impossible to buy for a reasonable price at this point, though. Suikoden games were hideously expensive years ago...

Garugo's list could simply be used as a checklist so long as you add Shadows of the Colossus to it.
PS2 slim can play PS1 games so I mixed some of them in there also.

RPG:
Final Fantasy series
Grandia I and II
Lunar 1 and 2
Shin Megami Tensei: Digital Devil Saga 1 and
Shin Megami Tensei: Nocturne
Shin Megami Tensei: Persona 3 and 4
Suikoden I-III and V (IV isn't very good imo)
Vagrant Story

FPS/TPS:
007: Everything or Nothing
007: Nightfire
Black
Darkwatch
Medal of Honor: Frontline
Project: Snowblind
SWAT: Global Strike Team
Timesplitters 2
Timesplitters: Future Perfect

Action/Adventure/Platformer:
Devil May Cry 1 and 3
Jak series
Metal Gear Solid series
Ratchet and Clank series
Resident Evil 4
Sly Cooper series
Zone of the Enders: The Second Runner

Horror:
Dino Crisis 1-2
Fatal Frame series (second one is the best but all are good)
Resident Evil series
Silent Hill 1-3

Garugo: RPG:

Suikoden III, IV, V (1 and 2 on the PS1)
I've heard good things about the Shin Megami Tensai games.
Amazing games, cant go wrong here. Also, look into the MGS games and possibly Goblin Commander Unleash the Hoard if you want some strategy. Oh, and the Punisher game is good old fun too
wow I pretty much forgot I still had a ps2 till I saw this thread. I haven't played it it in like 4 years and it just occurred to me that I could still probably* be able to play some of these that I've never played before (Fatal Frame 2, Silent Hill 2-3, Shin Megami series), It'd be awesome to replay ssx3 too

*I say probably because my ps2 can't read certain ps2 disks, like the ones with the blue backs

Darkwatch
Absolute must play title.

XmXFLUXmX: There was another couple of games, which were space shooting side-scrollers that I can't think of the name atm. The game i'm talking about had previous titles released on the SNES I think, and the games name started with a G.
You would be thinking of Gradius III and IV, and Gradius V. If the OP has a PSP or or is planning to get one I wouldn't recommend III and IV as the Gradius Collection on the PSP includes I-IV and Gaiden. If not it's a good set and should be cheap.

R-Type Final is another great shmup from a classic shmup series.

And oh yeah I forgot to add some comilations
Capcom Classics vol.1
Capcom Classics vol.2
Mega Man Anniversary Collection
Mega Man X Collection
Metal Slug Anthology
Sega Genesis Collection
Sonic Mega Collection Plus
Street Fighter Alpha Anthology
Street Fighter Anniversary Collection

Dont forget the PS2 is backwards compatible with the PS1 games also so you have a huge back catalogue to explore there.

PS1 :

Parasite Eve 1 & 2
Resi Evil series
Silent Hill
Martian Gothic
Medievil 1 & 2
Tenchu 1 & 2
Metal Gear Solid

Probably have to do eBay, car boot or that little games shop that a lot of people have near that is like alladins cave when you walk in the door to find some of those.

PS2 :

Onimusha series
Devil May Cry series
Jak & Daxter series
Silent Hill 2 & 3
Tenchu 3
Metal Gear Solid 2

Onimusha is quite similar to Devil May Cry but has a Japanese setting, Silent Hill 2 is a must (favourite in the series). Its literally just getting hold of stuff now, PS2 should be a little easier as new PS2 systems still get sold all over the world currently.
U guys forget Shadow of the Colossus, it is one of the several console games i ever played (b/c i 'm still pc gamer). And what i can say? It is incredible, truly masterpiece. An adventure action game.
Project EDEN is a pretty cool game. It's set in the distant future and you control 4 characters with different abilities that you use to overcome various obstacles.

Cant believe I forgot that one. When they got Eidos as a publisher here I mentioned it a few times. Its a great game start to finish. Few decent puzzles, good shooter mechanic, it just works and is REALLY fun to play. Shame it didnt get the accolades it deserved and passed a lot of people by, bit of an unsung hero when it comes to games from PS2 era.

Let's hope the Windows version shows up as the game is a forgotten gem...

I have it on disc thankfully. Had the first release of it when came out and played it through in a few days. Then my brother loaned it along with about 10 other PC games and I never got them back. Got it again a few years back on Sold Out Mastertronic range, works perfect. Hopefully it will land on GoG soon as it is one of those must play titles.

I loved the team mechanic on it, was put to good use throughout the first two thirds of the game, last few levels it was more of a 3rd person shooter but still good. Good example of team was near the end of the first level in the pipe to get the team back together. Using Amber the robot, stand in the pipe to tip it given the weight at the right angle so others could get through, clever use of the skills.
I was mostly an Xbox gamer that generation when I used consoles, mainly for Halo with my buddies, but did play Final Fantasy X and loved it. I remember Silent Hill 3 being pretty awesome as well.
