For most games requiring a serial to play online, you'll have to manually request the key to gog support team. They will send you the key a few days afterward.
But for some games, including UT99 and UT2k4, the CD key is already bundled with the installer. From your point of view, you have absolutely nothing to do : download the installer, run it, then run the game and you can play online directly. It's that simple, it's GOG magic !

Lol. This place looks pretty cool, and i have another question.
When I buy the game, say Unreal Tournament '99 or '04.
Do i get the full game with multiplayer, and I can still play with other people online?
Stupid question I know, but I gotta be sure. :)

You can play against people with non-GOG copies too. I've tried it and it works fine.
One thing to keep in mind though is that for many games here, working or not, the multiplayer will be deader than Elvis. Especially anything that requires IPX. Dead.
That's not a problem with the UT games though as the communities are alive and well.

Yeah, but what is the point of requesting a new one ? I haven't played UT2k4 online that much, but I've been able to connect to all servers with the "generic" key. Is there any limitation ?

No problem. Just use the generic key until it get's banned/doesn't work, then send an email for the new key.
I haven't played the game yet though, so I don't know if this strategy will work.. on paper it should.

I think some of the leagues that are still running or stat tracking systems might require a unquie cd key.
