I need another GoG fix, looking for some suggestions. I like games with a lot of replay value like X-Com or Fallout. I have mostly RPGs in my GoG collection, anyone know any really replayable strategy games? I'm looking at the Battle Isle collection and maybe one other game to buy.
In my experience the most replayable games on this site would be:

MOO2 - This is the king of 4X games. You can randomly generate galaxies and have many races to try out. It's the sort of game I play every few months since it came out.

HoMM2/3 - Turn-based strategy. This is the other game I play every few months since it came out(in the case of 2). The one off scenario maps give these games so much variety and longevity. Although I prefer the second one, most people prefer the third as it brings a lot of new things to the table.
I agree with lord.seo. My personal choice would be the HoMM series.
Baldur's Gate 2 for me (didn't buy it from GOG though). Massive amount of content in the game that makes me come back again and again.
Settlers 2

tropico.

and tropico 2: pirate cove.

it eats up a lot of your time.

Listen to this one, his/her wisdom transcends other posts.

Note: HoMM2 is better (harder) than HoMM3, the music is really, really good as well. MoO2 is the best choice, though.

I got this one and it includes the 1st one. I have had so much fun with it I haven't touched the 2nd one.
Unreal Tournament 2004.

Whiteblade999: Unreal Tournament 2004.
This is the best, modern shooter, if you're looking for one. Nothing since this has really been nearly as good.
I see replayability and Fallout in a sentence = Arcanum
I still load up Die by the Sword every now and then, and every once in a while my bros will ask me to re-install Freespace as well.
Like everyone else here has stated, there are multitudes of games in terms of replayability.

Considering this, here's my attempt at some GOG Addictions:

{Note: These are my personal favorites, recommendations based on your preferences are to follow in list form}

Baldur's Gate II:
Let it be said that there is a good reason why Bioware have not made a direct sequel in the Baldur's Gate series. Well for one, this game has a great conclusion with the Throne of Bhaal expansion. Two, the amount of effort put into this game is staggering, considering the amounts of voicetracks, the music, the artwork, the plot and the overall gameplay. This is one of my favorite RPGs of all time. I have clocked in 180 hours during one playthrough. Or was it 800 days of game-time? I don't remember. All I know is that I have fond memories of playing this game in high school and how I was the coolest kid on my block for having this game in the 5-Disc package it came in.

HOMM 2 & 3:
Everyone else has stated how that these games allowed for infinite possibilities in terms of replayability. As great as the campaigns were for these games (from a turn-based strategy standpoint), I had the most fun back in the day with the local multiplayer and just setting up random scenarios and trying not to get my ass handed to me by the CPU. I will be honest, I was an idiot when it came to this day and would have me vs 7 computer players... D'OH!

The Last Express:
I could say so much about this game and how to this day I still love to play it just to see what different choices I can do and where I end up.
If you are unsure about this game, read this well-written article about it (complete with a dash of humour): The Last Express @ Crapshoot

Arcanum:
Fallout with elves during the industrial revolution. This game is an epic example of steampunk with a unique twist. I know that there are bugs in this game, but honestly I was so drawn into the setting, the plot, the music and the gameplay that I consistently find myself going back to the world of Arcanum. The game can be challenging but also rewarding.
Plus, who doesn't love having sexual encounters with sheep?
*BAH!*

The Longest Journey:
I have every puzzle memorized and every plot twist as well, yet this adventure game is something that I find myself going back to when I need to just unwind after a long day. Honestly, this game is an example of how a point and click adventure game should be. Yes, there are the treasured Lucasarts games of old, but this one is a treasure as well.
Besides, Crow is by far one of my favorite characters in any game.

Planescape Torment:
What is there to be said? A great RPG, with a storyline that resonated with so many due to its creativity and originality. Great voice actors, great storylines and characters that you actually gave a damn about. Plus, Morte is my hero. Even if he tends to hump anything that has... actually, Morte humps anything.

Beyond Good and Evil:
Some might say that there is no reason to revisit this game after you beat it. I say, nay nay! Any game that is this beautiful in terms of its artwork, engaging characters, fun gameplay, astounding soundtrack and awesome setting; is always worth another playthrough... or 10... I am not addicted... I am not addicted...

So those are some of my choices.

However, considering your preferences.

1) HOMM 3
2) Space Rangers
3) Arcanum
4) Baldur's Gate II
5) Settlers II
6) Tropico
7) Age of Wonders Series

Enjoy! And let us know what games you end up getting. :)
FarCry - multiplayer.
Normally my answer to this might be any game that had a very active online community. You can play that sort of game every day for years on end.

Total Annihilation was like that for me back when it was first released. It still remains very replayable against the computer alone, but it was the online community that made it completely absorb my life for a few years. Good deal by me, though. Kept me sane through some ugly times. But now that community has shrunk dramatically and is not as easy to get to. So I'd reluctantly not give TA or a game like it first place.

X-COM: UFO Defense would be great, but as endlessly replayable as the battles are, there is still the same old story to be followed. This makes for a predictable endpoint, which makes the game one to gleefully bust out and have a blast with every so often but not play every week or every few days or every day forever.

So I'd vote for a particular type of game and one with particular qualities: the sandbox game that isn't in too overcharged or strident a setting.

As to the first part of that, the sandbox game is one in which you fight the computer and don't need an active online community. You fight it on levels or maps that are randomized each time. Even better if you can randomize what type of character you play in the game, maybe randomize certain things about him too, like his capabilities or what weapons he starts with, etc. Obviously, the AI you are fighting against can't be total garbage, or the whole deal's off.

As to the second part, the setting, some will disagree, but to me, you need a game in which the setting isn't too over the top. Like, I like everything from Mozart to Gang of Four to Jim Croce to Miles Davis, but if I had to pick the one record to listen to for the rest of my life, it would not be Trent Reznor. It would be more something I could listen to in almost ANY mood. Similarly, I wouldn't play a game that got me too tense because I don't always feel ready for that or interested in it, nor a game that is too slack and sleepy because sometimes I do want a bit of a challenge.

Everybody draws those lines for themselves differently. They probably change as your interests change and you get older, too.

For me, I think HOMM2 or HOMM3 hits the sweet spot best. Endlessly replayable, playable a variety of ways, lighthearted enough that you don't have to be in a "mood" to play it and it doesn't put you in a "mood" either, besides a good one. Ever play a game that gets you so wired you can't get to sleep? HOMM2 and 3 are definitively not that game. Ever play a game that puts you to sleep? HOMM 2 and 3 neither overwhelm you with so much that you shut down nor give you so little to do that you're not keeping busy.

For me, perfect. I can play it every day. And do.
