Golgo 13 has some pretty violent parts. It's about a hitman whose weapon of choice is a pretty nice rifle and it gets explicit with the hits.
One of my favorite animes, Vampire Hunter D, is awesome with a good story and sword violence.

EDITx2: I see a few recommendations for Berserk in this thread.
While the anime is okay, if you really want to get into the series, I recommend the comic.
The artwork and story telling are simply fantastic.

If you are interested in manga, I hear Shamo is pretty damn violent. For starters the main character kills off his parents and gets sent to juvie. The story is about his decent into the darkness as he learns the way of the martial artist.
These might be a bit too tame for you, but they are pretty violent, iirc...
