shortstack: This will sound silly, but Microsoft Flight Simulator 5.0. My dad had it for our 386 back in the early 90's and I used to really enjoy flying around and looking at stuff :)

That wasn't a bad game - MS used to do a really good job w/ flight games (under the guise of Microprose for their combat sims)
Mine would have to be Star Crusader.
I loved it growing up and haven't been able to find a copy in a few years. :(
Would Freelancer count?? Because I love that game!

Valkyrie, because I played that one to death on my old mac many years ago.
Edit: Also FlightGear, because it's free.

Freespace for me not a big fan of 'proper' flight sims
I just loved Microsoft Flight Simulator 2000. Ah, the innocence of youth.
Hmm... well, I'm not a fan of 'pure' flight sims either, but X-Wing was my poison of choice back in the day, and I'm leaning towards Freespace 2 or X3 now.
My choice is IL2 Sturmovik 1946 for it´s adequate realism and unstoppable support from fan base. I was dreaming about dogfighting from my childhood and now my dreams come truth.
As far as PC flight simulator's are concerned, I've only played MS Flight Simulator 98.
As far as space simulator's are concerned, I enjoy X-Wing Alliance, but way back I loved the Archimedes version of Elite. :)
F/A 18 Hornet, even though I sucked at it.
My favourite was F-29 Retaliator. It also contained head-to-head mode.
