Please be aware that even though Champloo is a samurai series, the soundtrack is mostly hip-hop and rap. Also if you like the soundtrack for Bebop and Champloo, you might also try Michiko to Hatchin since Watanabe is also the music producer although he didn't direct this one.

Cowboy Bebop is awesome! watch it in Japanese with subs, Ed is a completely different character *better in original Japanese, more hilarious.
Dont forget to watch the movie, and if you like the Samurai Champloo music rewatch Cowboy Bebop remixed.
Samurai Champloo was pretty good.
not sure which anime has aired you have access to but dont miss out on:
Vampire Hunter D,
Ghost in the Shell (og movie, stand alone complex, GITS:SAC movies),
Ninja Scroll,
Serial Experiments Lain,
Berserk,
Blade of the Immortal,
Great Teacher Onizuka,
Shingetsutan Tsukihime,
Perfect Blue,
Mushishi,
Texhnolyze,
Gilgamesh,
Samurai Deeper Kyo,
12 Kokuki,
and the 2 Record of Lodoss War series.

SirPrimalform: It's not an issue as long as that's not all there is to it, which I'm assuming it isn't. Unless of course the only reason you liked it was the violence. :P
Nah, I liked it because its awesome. Well, it maybe takes a few episodes to get into it, and has 2-3 too many episodes, but other than that its great. On the opposite side of the spectrum, the following 3 are hillarious series which should be watched by all lovers of comedy:
School Rumble (just don't expect anything to get resolved by the end and you won't be disappointed)
Ouran High School Host Club
Sgt. Frog

The biggest issue with Trigun is that it has a terrible dub job, so if you're trying to get someone "into" anime but they refuse to watch it subbed, it can be kind of a turnoff. Other than that it's one of the better ones I've seen.
Cowboy Bebop is amazing, and actually has a GOOD dub. Really though, both of them are in my top five animes, along with FMA: Brotherhood, Darker Than Black, and Gunbuster.
I haven't actually seen Samurai Champloo, so I can't give any advice there.

They're both quite good. I still need to pick up the dvds of Champloo though.
Some others you may like:
Afro Samurai - hip hop soundtrack by The RZA. Samuel L. Jackson voices some characters in it. Very bloody but quite good in my opinion.
Eureka 7 - Giant, sky surfing mecha show, but another good soundtrack. This one leans towards techno in terms of soundtrack.
Code Geass - The art style may put you off on this one, if you don't like that One Piece-style uber-long limb look. I can't stand One Piece, but love this show. Lelouch is the poster boy for Magnificent Bastard.
Gurren Lagann - Another giant mecha show. I'll say one thing...there is nothing that cannot be made more awesome by adding more drills to it. I'll BUST THROUGH THE HEAVENS WITH MY DRILL!
Trinity Blood - Very beautifully animated show. Deals with vampires and those who prey on vampires.

The Cowboy Bebop soundtrack is like the most super amazing thing. Hearing it may cause soundtrack hunting sprees.
The Cowboy Bebop movie is one of my favorite movies of all time too. Always up for watching it :p

I can't stress enough NEVER EVER get the Blu-ray collections of Champloo. Where as the clean up is mostly for the better this is not the case here. There is a grainy-ness on the DVDs that is eliminated in the Blu-ray, which is part of Champloo's charm. The series is MEANT to have that grainy feel and without it, the series seems a bit lacking. It's like how Vinyl is superior to CD in sound quality and signal range. So, given the option, to even the most determined of Blu-ray purchasers, get the DVD instead. Some others you may like:

Isn't Bebob just a mash of different styles? From noir in the main storyline, to comedy, adventure, mystery and horror in the side episodes... It can be used as a test, I think: just mark the characters and episodes, that you enjoyed most, and get pointed toward similar anime genres and series.

Fomalhaut30: Eh, I don't have a Blu-Ray player, so it's a non-issue. IMO, anything less than Avatar-level graphics is a waste of money for BRs. I can't think of any anime or cartoon that is worthy of the extra cost of a BR purchase. Oh, one other recommendation...Basilisk. Awesome ninja action.
Basilisk is a rather good anime, good suggestion!
