I'm really interested in the Interplay catalog, but I notice that a lot of the game cards do not mention windows 7. Will they all run on my Windows 7 64-bit OS?

They will run. I had no issues with VR Soccer, but Screamer cut out while in a series of races, so that wasn't good.
Most games here run just fine on Windows 7. If a game card doesn't list Windows 7 compatibility, it just means that GOG hasn't tested it on Windows 7, not that it won't work.

If you're in doubt about a game, look in the subforum for that game or series. If anyone has had problems running it under Windows 7, that's where you'll most likely find the information. If not, you can expect it to work.

Screamer random crashing is an old bug. Apparently, editing the dosbox cfg for the game so that the emulated RAM is 64 Mb is the solution, though I haven't tested it extensively.

Look into the game's forum right here. There's a thread I started sometime ago, with some good answers by the end of it (after the marked solution, so the solution is actually wrong, if the tips do work).
