aivadroid: Oil is the secret...or part of it! Use olive oil or canola oil (if you do not have olive oil). Oil your potatoes generously with either a cooking brush or your hands. They should be shiny, but not dripping wet. The oil will keep the skin from drying out and wrinkling and it will make the skin nice and crispy.
I'm not trying to sound like a health nut, but just wanted to let anyone who cares know that there have been some studies that suggest olive oil can actually turn carcinogenic when exposed to high temperatures. It's complicated but basically every oil has a "smoke point" which is the temperature at which it turns from oil to smoke. Once it's smoking it becomes unhealthy to consume.

Olive oil has a relatively low smoke point, meaning it doesn't take that much heat to cause it to start smoking. So for that reason it's not the best choice of oil to use for cooking. A much better alternative that is equally as healthy but offers a much higher smoke point is grapeseed oil.

You don't have those in Vietnam? Or do you mean the non-sweet potato kind? I love my sweet potatoes the way the Chinese do them. They're so tender and good.

But, the do get kind of weird sometimes. I had one a couple days ago that was bright purple.

Basically, they bake them for many hours, until the sugars are caramelized and the interior is incredibly tender.

Non-sweet potatoes, yes. They do exist here, but ovens don't so much, so baking one would be more hassle than it's worth.

When I lived in China, there was this one bus which was always crowded with geriatric people, trying to get huge sacks of potatoes home. It got pretty fierce -- Chinese grandmas are badass. :P

It might be just slightly more expensive but honestly I haven't noticed much of a difference in price. But I agree olive oil is delicious! I just don't use it if I'm gonna cook with high heat anymore. I love drizzling it straight out of the bottle on salads though!

aivadroid: Poke them around! Poke your potatoes all around with a fork. This step is necessary to let the hot air cook the potato through while the pressure created by the steam escapes through the holes. If you ever forget to do this step, I promise you the mess of a lifetime as your potatoes will explode under pressure.
I usually don't do this, but instead I take large potatoes and wrap them in aluminium foil. Before you wrap them you have two choices though, either bake the potato as it is, or peal it and add spice & oil (make a "cup" of aluminium foil, put the potato in it, add some oil and spice (some chili of a semi-hot kind works well, as does a bit of onion and thyme)
