Oh, shame on you, blasphemous heretic! :P
I'd recommend you to start with TOS, indeed. If you're ready to forgive the old special effects and the occasional goofy plot (though that can be said of each iteration), that's the best way IMO to start enjoying ST, you'll get a good basis to understand the overall franchise. As you may guess by my avatar, I love TOS, I did grow very fond of the cast in that series, watching them adapting and developing their characters on the fly. :)
BTW, have you seen any of the ST motion pictures (either based on TOS or newer ones)?
