I have tried to use the GOG DOSBox Configuator Graphics Mode Setup to take Ultima out of Full Screen Mode. When I go to save the configuration it says "Error: Games Not Installed" when it clearly is installed. Anyone have thoughts on this? BTW running Win 7.

Try running the configurator from the game's folder.

Same error for me.
Plus in Fullscreen-Mode text is cut off left and right. Presumably also parts of the top and lower sections are cut off.

Edit the .conf file yourself.
