Simplest wiki I use (for work projects) is pmwiki.
It's all flat-file (no databases & only basic php requirements), you can restrict individual pages from edits, or add an addon to setup user accounts. Takes about 20-30 minutes of reading to learn how to setup initial settings and it's easy from there on.

do you want the wiki as some sort of editable faq.
or something that holds the "missing" functionality like user pages ?

Yep, it does.
That site also one of those that causes people to loose hours of productivity. Good thing I'm sick and not at work :)

Delixe: or they saw it on Steam and want it with no DRM which again misses the point of GOG.

...I must have missed the point of GOG, but that seems like a perfectly valid reason to put a game on the wishlist.
What about a hosted wiki? Wetpaint, PBworks (which I love the most but is more advanced), or Wikidot can do fine without the hassle of a server.
EDIT: Done. You'll have to sign in/up to edit though. Yeah that's right, thank me later.

"Hi. This is a wiki. An ad-laden, ugly as hell wiki."
No ads with Firefox and Adblock plus!
I could start hosting it starting from next month so that it'll have it's own domain and no ads.

It's own domain? Hmm, maybe later. I don't know if it's just going to sit there and rot, like most other GOG community things have. When it's popular then maybe.
