They see your username on GOG. The e-mail is marked with GOG's e-mail address, not yours.
^ actually, next to your username your email in brackets is given. The you used to register GOG account.

precisely, you'll get the gift e-mail with a code, sent that code to whoever you wish through whatever method's available (e-mail, instant message, PM, physical post, whatever...) and they'll be able to redeem it at gog.com/en/gift

...and in case something happens to email, you can see the code under 'games->gifted' on your account page.
