Ok, I need someone who has received a gift in the past to answer this question. If you gift someone a game, can this person see your real name etc?

They see your username on GOG. The e-mail is marked with GOG's e-mail address, not yours.

^ actually, next to your username your email in brackets is given. The you used to register GOG account.

.. but only if you are using e-mail to gift, not just code + pm.

precisely, you'll get the gift e-mail with a code, sent that code to whoever you wish through whatever method's available (e-mail, instant message, PM, physical post, whatever...) and they'll be able to redeem it at gog.com/en/gift

...and in case something happens to email, you can see the code under 'games->gifted' on your account page.
