I would love to see a remake of Shattered Steel: the same game, same Planet Runners, same weapons. Only with a few new bots, improved enemy AI, a very bigger variety of levels and greater increased field of vision. Of course, along with all things mentioned above, all features should be implemented considering a great graphic quality improvement (sound quality should be improved as well, but this is secondary - the quality of sound effects in the original game, with some tweaks and upgrades, would be acceptable even for today patterns...). And of course, there would be necessary expansion packs with new missions and even a Shattered Steel II release after that. A sequel where you would prove your Planet Runner in single player combat against other runners, controlled by "humans" (human bots) of enemy corporations (I still don´t know why in hell's name Interplay never did so. I think maybe because they intended to do it exactly in another upcoming title of the franchise...). Anyway, it is a pitty and a shame this game never had a sequence.
Oh, and as stated before: tittles like Carmageddon and Stunts would be perfect as a target for a good quality remake. I would love so.
At last, but not least: would like to see a remake of Alone In the Dark I. It could scare a lot of people! Hehehe.
*** Off-topic here, but when will the GOG.com team re-release this masterpiece of the survival horror genre mentioned above? I'm waiting!!! :-)
Regards from Brazil!
One of my all time favorite games was the original myst. If they kept everything the same, just gave it the camera movements of Exile and a graphics update, I could probably play that for the rest of eternity.

Myst has already been remade two times. The second remake, realMyst, let you roam freely around a replica of the environments from Myst rendered in full 3D, complete with weather effects.
Quite beautiful, if I say so myself. Tracking down a copy can be rather tricky nowadays, but it's definitely worth checking out if you're a Myst fan.
In no particular order:
Quarantine, old "Doom + Carmageddon + cab driver" simulator. Ran great on a 286 12MHz.
Monkey Island (series), Can be the old story, just new GFX and sounds.
Deus-Ex, everyone knows of this one.
Syndicate, the original. Some followers came, none matched up with the first one.
Shadow Warrior, "You no mess with Lo Wang".
I can go on and on for hours... But this would make me giggle like a 12-year old again.

Wishbone: Oooh, that's a classic. Have you tried Trackmania Nations Forever? It's not Stunt Car Racer, it's much more advanced/complicated, but it's a similar concept (that is, it's racing with stunts). Plus, it's free.

Hehe, went and bought Trackmania United Forever the moment I realized I could get it without any added Starforce crap. Very good indeed, but insanely difficult on the later stages.
Another one worth checking out (if you are into that type of thing), is http://www.nitrostuntracing.com/cms/
Not as comprehensive as Trackmania (not a lot of tracks), but the gameengine performs very well indeed, and it's great fun to play :-)

I make perfect sense! The same thing that happens with movie remakes applies to games too, you know!
Depends on your definition of remake.
Mine is: upgrade graphics and audio to meet today's standards, perhaps add support for more controllers (like middle mouse button and wheel) and leave everything else alone.
Sort of like going from SD to HD in the movie world.
My pick would be:
1) Battlezone 2: Combat Commander
2) Wacky Wheels
3) Hocus Pocus
4) Mystic Towers
5) Terminal Velocity
6) Severance: Blade of Darkness
2 to 4 are from Apogee.

ElPixelIlustre: Heroes of Might and Magic 3. Just the same game with better graphics, a few more units, one or two new campaigns, and the same addictive hotseat mode.

That would be Heroes of Might and Magic 5. ;-)
