Cliff Racers leave me speechless, just shaking my head. I hate them so much I can't even think straight...
Favourite enemy is probably those Daedra spiders because they spit out little versions of themselves, like Minime. In second place is every guard in Daggerfall - halt, halt, halt, halt, halt!

TES IV zombies here too. When the first one jumped me in the dungeon beneath that island where you get out of the sewers (Going spelunking there was the first thing I did in TES IV.) I was actually disgusted and jumped a little in my chair.

Has to be the dragons for me. Nothing is more fun to kill.
Either my play skill is ridiculously better (fat chance) or Skyrim is very easy. That's the only issue I have with the dragons. I wish they were a bit harder. Nonetheless, they're a blast.
Another notable mention are those biting fish. I never played TES2 and I don't know if they are in that game (I don't remember them in TES1, but maybe I just don't remember them). In TES3, early in the game I took a happy swim. I think I was admiring what I considered to be the significnatly awesome graphics at the time. And then WHACK! WHACK! WHACK! I'm dead.
Now every little puddle in the entire world in all the games of TES gives me a good dose of fear. I will not touch water unless I have to.
