Seeing the thread on Doc Louis' Punch Out reminded me of this old punching game I used to play at arcades. Basically, you insert token, then choose who you want to beat up. The punching stick/bag/cushion thingy comes out, and then WHAMMO! you bash the thing back into its seating, and the screen shows the guy being whooped, then the game calculates your overall strength.
Anyone remember it? I can't believe they're not producing such games anymore - how can guys resist playing this in front of their girlfriends? Then there was also the old arm wrestling game, called Arm Champs, where you arm wrestled with various opponents, the toughest one is this purple cyborg. Fun times, fun times...
Shame these games have been replaced today by cheap-looking counterparts.

That game actually came to my mind when I started reading your post and before I even got to you mentioning it. =P
The one thing that stuck out in my memory from old arcade games were the animation/laser disc ones like Dragon's Lair and Space Ace. Apparently they were redone for the PC a while back but never bothered to get my hands on a copy.
I've never played such games, but it does remind me of this one Japanese arcade title called Boong-Ga Boong-Ga.
Only in this game, the punching bag is an ass in jeans, and you have to either spank it or pick up this hand with a finger pointing out and jam it as hard as you can into that ass, all while watching some character on a screen react to your punishments.
No, really, I am not making this up.

The Arcade for me was about 3 games, in chronological order:
Terminator 2: Judgement Day. I *SO* used to put a credit in each gun and play both players!
X-Men vs. Street Fighter. You can keep your marvel superheroes, or Marvel vs. Capcom/SNK/etc, I will take X-Men THANK you. It was the first game where *I* saw Capcom characters with supers, and the super jump. It was like a revelation for me. I never got good enough really, never getting beyond basic super moves and maybe a scattered air juggle 4-hit combo, but I could hold my own.
Virtua Fighter 3 BAY-BEE! Just *try* to beat me as Wolf. *try*. I made throws cool again, and annoying again.

I've played that too. It's blasphemy to play this on any other platform other than the arcade. Good times. There's also a similar game called Gunblade, and the gun vibrates, as in every shot causes the gun to force feedback, so it's like "doong doong doong doong doong" and the gun keeps jerking off while you shoot (<3 puns). Pretty awesome.

T2 had the vibrating guns also...SICK fun, and yes, the only way to play is in the arcade.
