My Fav anime was All Purpose Cultural Cat Girl Nuku Nuku, Macross and The Slayers
The easiest difference is that Cartoons comes from the west, and Anime comes from Japan

Well, I couldn't very well miss this one, what with being in the title post and all. So I'm in like Flynn!
And now, let me tell you about Mobile Suit Gundam 0080: War in the Pocket. Now there's plenty of Gundam shows out there. It's probably the biggest anime franchise, and likely one of the biggest franchises, period. So what makes this canonically insignificant 6-part OVA special?
It starts out rather dreadful. In a space colony largely spared by the concluding war, a pre-teen kid meets an enemy pilot and, motivated by the tedium of his daily life, engages in various shenanigans, generally being a bother and a pest. Half the show passes thusly, and the viewer begins to wonder how there could possibly be any merit to this boring and light-hearted "war" vignette. And then the action starts; and things start going wrong; and people start dying. And the viewer starts to realise: this isn't a robot anime about a war; this is war. Messy, tragic, misguided, costly. There are no flashy robots here, no glamorous aces, no glorious battles. Just two run-of-the-mill soldiers, who have every reason not to fight each other, yet must wage a battle without quarter. And the lone observer who bears witness, that observer is you, and he is the kid. And you both know this should not be happening, but you are utterly impotent to stop it. So it dawns upon the viewer, that they were the kid the entire time. As the kid was bored to recklessness of his boring life, so too was the viewer eager to skip through the boring parts and get to the exciting fights.They both got more than they bargained for, and as the kid is left with the terrible knowledge of what has transpired, he can do nothing but cry. And for once, the viewer understands.

As I said, Maison Ikkoku is my favourite anime.
It talks about a student, Godai, who can't be admitted in university.
He fells in love with Kyoko, (administrator of the house), which is a young widow.
And so the story goes on, several years passed, Godai finds a work untile he managed to marry Kyoko.
I'm not good to tell story, but this is a simple but still amazing one, you must watch the series.

I like my graphic novels, but I really don't like anime unfortunately. Hopefully that fact doesn't remove my entry ;)

The only anime I can remember which I really loved was Spirited Away, which I'm guessing everyone has already seen. If by any strange chance someone hasn't seen it, though, I can wholeheartedly recommend it.
Are you into manga too? If so, I might be able to recommend something a little unusual.

I'm going to suggest Monster. It's a Hitchcock worthy thriller set in the modern time and it's very good at building suspense and mystery. There's even a mix of noir influences, especially in later episodes. The characters are, for the most part, complex and have believable motives. The character development is well done, and surprisingly subtle in some cases. Most of the story takes place in Germany/East Germany and Czech Republic/Czechoslovakia, and the European setting is very authentic and has clearly been very thoroughly researched. So if you want a story with a complex plot, good pacing, and memorable characters, give it a try.

I'm in like Flynn!
To be honest I remember watching some animes some years back, but I have no clue what their title was. Does the Final Fantasy movie count? :D Because I did like that one, I remember the great animation... :)
I'm also a hoarder unfortunately. And lately (after discovering bundles/gog/cheap sales) I've become a gaming-sale-junkie. I buy way too many games.. and my backlog is already very long. But still I miss a lot of gog games, thus I'm in of course ;)

I really got into Paranoia Agent myself. The story is a bit bizarre and twisted. It's about people who are (apparently) randomly attacked by a boy with a baseball bat, and in strange ways the attack has improved their lives somehow. There's an overarching story of detectives trying to find the assilant, but every episode also tells the story of a victim. The stories range from tragic to dark comedy.

About the anime: Berserk of course. Different from the usual anime, cruel, lots of blood, male, awesome character, epic plot, a real masterpiece in my opinion.
