I love the opening to Xenoblade Chronicles. That being said I don't often remember the openings of games as usually I find them a little bit irritating when I have to sit through them before getting into a new game, short and sweet is best.

My absolute best is The Witcher 2 Assassins of Kings.
Graphics, effects, music, cinematic capture, extreme details (notice the vibrations of the arrow).
(Even though I'm a hardcore deus ex fan, this is better)
The Witcher 2: intro and prologue are pretty awesome.

FF8: intro blew me away back in the day, and I still love to watch it once in a while.

Diablo 2: intro and cutscenes were awesome.

HL1: The whole opening with the train showing you the world, getting the HEV suit... (why did they leave out the computer checklist in part 2?).

HL2: "Wake up, Mr Freeman". The whole beginning was a masterpiece of creating atmosphere. It's a shame such a dull game followed after that.

Bioshock: The whole plane crash, descending into the tower. The splicer trying to get into bathysphere...

On a simular note I liked the PS1 version of ff6's intro.

Totally personal, but when I see an overview of the island at night, lit up in certain spots, and then the familiar upbeat reggae music starts, I know it is time to go on an ADVENTURE!

Monkey Island (1 and 2 and even 3, I guess)
I think the Onimusha games on the PS2 had some good intros, especially the third one.
