Even as a GoGer I find it hard to look past those unintentional(?) eight bit styled graphics.

My recommendation would be Defence Grid, chasing the online high scores adds a lot of replayabilty making it good value for money. It's weird how on occasions I have spent longer on one level than the average game time playing Civ.
I'll add Dwarf Fortress into the mix, somebody has to. ;)

Spelunky- Rougelike+Platformer. And you can destroy terrain!
Chzo Mythos-Pretty Good horror adventure games
Eversion- Platformer... with a twist.

I've just had a look at the game and I've no idea how you arrived at the conclusion of it having 8-bit style graphics.

As in 256 colour? Actually that's been kind to it, I count more like just 8 colours on the version 3 video

Ah, I see you meant 8-bit colour depth rather than 8-bit computer (Atari 2600, NES, Master System). Still, it doesn't to me look like it uses a paletted graphics mode, it looks at least 16-bit to me (in terms of colour depth).
Bland colours <> low colour depth

If you can only see 8 colours, how are they achieving those gradients on the interface?

Don't think it's been mentioned here, AI Wars from Arcen Games is a great one as well. (actually it was, somehow I missed the whole second page)

The game is still in alpha, the graphics aren't final. Right now the tweaking of game mechanics and balancing is the focus. I have no fear, Achron shall be beautiful, brilliant and fresh it is already.
World of Goo is excellent. I also loved Aquaria. Wik and the Fable of Souls is a few years old now, but I enjoyed that thoroughly. For mindless fun I spend many hours shooting things in Crimsonland.

I'd just like to say this is a really cool thread. I've found out about a bunch of great games I'd never heard of. Thanks to all the above posters!
Mount&Blade. Not saying it's the best, just my personal favorite.
