If I had limitless funds, you can be damn sure I'm not going to hire out some other studio to make my game. I'd form my own studio. I've got plenty of ideas for games that would require a AAA budget. Unfortunately, most of them are just little vignettes or abstract concepts, since I don't really have any reason to develop them any further, as I'm not actually in possession of unlimited funds :P. The one concept I've been toying with (and creating different 2d versions of) for years involves a large rotten swamp filled with industrial ruins and trash, with dynamic sandboxiness like that of STALKER, but with more focus on survival mechanics and emergent storytelling. If I did that, I'd probably try to pick up the leftovers of the STALKER team, at least. Probably a few of the more prominent STALKER modders too. And I would also hire the Johnson brothers to work on the skies and weather effects :P.
Truthfully, though, I'd probably be happier with a small indie team (like, 3-5 other people), or just continuing to work on my own.
