Limitless funds? Feed everyone.
An open world RPG in Asimov's Robot universe from Obsidian, after they finish KotOR III.
1) A space morrowind (with elite-like interplanetary travels, and vvardenfell-sized planets to walk on)

2) An Old West fallout (top-down, free-roaming, factions, etc, but no scifi or fantasy at all)

3) An eight-legged-freaks fps (mostly linear and basic)

Am not attentive enough to the studio names to really say which one I'd hire, though the original fallout(1,2) teams and morrowind team would do nicely.

I'd also ask the nolf team to make nolf and the stalker team to make stalker, but they did already.

I would buy the rights to Ultima and System Shock and then remake Ultima IX using the orginal Bob white plot by Obsidian oh and give the rights to System Shock to GOG

Alternatvely buy the rights to Grim Fandango and have Double fine produce a sequel and a remake.

It would involve a few studios.
Near-Future FPS. DICE makes the multi-player, massive player battles (400-500 a side), can control water vehicles, & there's a shit ton of vehicles to pilot. Crytek makes the Single-Player, designed like the original Crysis.
If not, Impossible Creatures 2 or Rise of Nations 2 or a Dawn of War game where the customizing aspects of the table-top is brought over.
OR Deus Ex 2. Like the original, just bigger & better in every respect.

I'd go for more of a production risk that completely bucks every market trend currently running than a high-spec affair. And if I had to pick the story, I'd go with a humorous 3D RPG in a contemporary setting similar to Earthbound, where nearly everything is custom-nameable and the protagonists are unusual for the genre. I'd even take it a step further and let the player name the villain, like in Pokemon, only it'd be a real villain and not just your next door neighbor. Every NPC would have a solid personality that stays constant throughout the game, so you could go back and interact with the same person and it'd actually be like you were talking to the same person reacting to in-game events in character.

Either that, or I'd decide to make a cartoony shooter. Something funny like Portal, but with more weapons.

I'd put most of the unlimited funding into advertising it, though. So many quirky and charming games go unnoticed because of poor advertisement. I'd definitely try and avoid that mistake.
I'd get Blizzard to make Dungeon Keeper 3, and make it DRM free.
I'd create an open world single player rpg - too cliche I know. However it would be full of dark gothic imagery, conspiracies in an otherwise normal looking world. The world is filled with anomalies such as mystics, secret societies harboring deep secrets with far reaching consequences if made known, humanoids posing as humans, otherworldly secrets and all this against a grimy noire backdrop. You are going to have to listen to conversations in sleazy bars, dark corners etc to know what's going on...You play a detective.

Everything you do has consequences.Far reaching ones....And the game keeps evolving in accordance to the actions of the player. Your appearance changes and people react in accordance...
