I've gone on a nostalgia trip and I would love to get this old demo by Melon/Scoop running in DosBox with desent sound..;

That demo comes preconfigured to use Gravis Ultrasound and DOSBOX uses SB16 by default, that's why it's not working. The easiest way to get it running is deleting the file "NINJA2.CFG". By doing this you will get a sound settings menu when you launch the demo. Just go through it by picking all the options highlighted by default (SoundBlaster16, port 220h, IRQ 7, DMA 5, 44100Hz) and the demo should work now. Good luck!
What PokerCrow says sounds like it makes perfect sense. The other (slightly more complex option) would be to get DOSBox using Gravis Ultrasound, but that would involve downloading the sound sets.

Not all games support GUS, but when they do it tends to be a step up from Adlib/SoundBlaster.

Interesting. I sometimes wonder about the other sound devices of that era. I remember having a Disney Sound Source for a while, it was an oddity that would plug into the parallel port. When it worked, it was pretty nice, but it was quite flaky, sometimes I could get it to work, and other times not so much.

At some point, I should really give Roland a try.
