The game has only 14 reviews on Steam despite being out for 3 months.
Checking Steamspy, yesterday it reached a maximum of 3 Concurrent Users.

No one is buying this game. No one is playing this game.

Most of the time, "Why isn't GoG interested in XXX" is for this reason. You may think it's great from the advertising or because it claims to resemble a classic game from the past, but at the end of the day, before GoG pays a lawyer to draw up contracts, they are going to decide how well it may sell and whether it will make them money...

I watched a gameplay video and to be honest: I would not buy it.
And I love platformers and old games.

But this one just looks too slow and not very entertaining.
My two cents.

Edit: have you asked the devs why they don't release their game on, let's say, itchio.io?
If they are really interested to bring a DRM free version of their game on the market, this would be a way to go, no?

From Robot Riot's FAQs:

Q: On which platforms will the game be released?

A: For the start, the game will come out on Xbox One and Steam (PC and Mac).
Other console versions for Nintendo Switch and PS4 are already in the making and will be released early 2019. There are also plans to release a mobile version for iOS and Android, but there are no release dates available yet.

To me, that doesn't look, like they ever intended to do a DRM free (=GOG) version.

And after the lackluster salesnumbers, they feel even less inclined to put in the extra work to strip whatever DRM they may have used, and integrate GOG-Galaxy instead.
I'd buy it.

At the time, perhaps. But a 30 year old platformer from the days before smooth scrolling was mastered, maybe not so much today. Even in 1991, there were several better games that I could readily list.

Just slapping a shiny layer of paint on a game isn't going to cut it when we have games such as The Messenger, Shovel Knight, Volgarr the Viking, and many others which took the lessons from 30 years ago and actually improved on them; unlike say Mega Man 9 which was such a hamfisted loveletter to nostalgic wanking that it was entirely to the game's detriment.

Looking at a short clip of gameplay, Gods is a game with such glacial pacing that it makes Ghost & Goblins look like Sonic the Hedgehog.

I was just playing the original Godz over the weekend. It's fine. It is a bit slow but that's okay because it's a game that demands you play somewhat cautiously and you need to learn the level layouts and what traps you might spring (aside from having a little bit of jumping, it's really not so similar to Messenger, Shovel Knight, Volgarr, etc.). It's also beautiful, as Bitmap Bros. games usually are. Most likely the reason GOG doesn't want it is because it's a crappy remake that's well overpriced. If GOG could somehow get the original game and sell it for $5.99, that would be a no-brainer.
I'd prefer the old version here too. I don't want another overpriced 'remaster'.

Again, this is from what I've read and not first hand experience, but it appears to have a completely new soundtrack. Here is a blurb from the official game site:

"While the original gameplay and levels have been preserved very accurately, the new version features more state of the art HD looks based on a complete 3D based refurbishment, lighting effects and an extraordinary new soundtrack."
