they didnt, also if you dont have a shortcut just simply go to the game folder and click on the game to start it.
You know, as someone who doesn't even use the desktop anymore, I'm kind of surprised anyone would ask this.
If you install the games via Galaxy, the default desktop shortcut opens the game through Galaxy. You can still manually create a shortcut if you want to play offline.
I install all my games using the offline installer. It gives me desktop shortcut ever time.

Just like what JakobFel has stated, you can just head over to the game's folder and create a desktop shortcut from the game.exe directly. That way you won't have to login to GOG Galaxy whenever you want to play the game. Or just don't download the game through GOG Galaxy altogether.
If you go into the game's folder, there will be a short-cut there also. You can just drag this to you desktop.

You don't need to. Just check the red highlighted box when installing the game and you'll be sorted. Although I'm genuinely surprised that people still want shortcuts on their desktops. With HDDs and SSDs so cheap and large these days, I'd find that somewhat impractical.
