The icons in the game executables are unedited.
I agree, I prefer the original icons because that is how they were meant to be. If anything maybe add an option during the install process to choose. I also think the circle icons sometimes are hard to tell what the game is, they aren't icons like the original were. To me it makes sense to have the old original icons since gog is big on old games and it's how they got their start/success. Part of reliving these games is the original icons imo, otherwise it takes away from the experience.

If you prefer the original icons you can always find them in the installation folder and create a shortcut on your desktop.
You can use IconsExtract to save the icons from inside the exe file.

For every Windows-native game. Many DOS games didn't even have icons.

I don't recall many DOS games coming with icons. Maybe a few in the early days of Windows 95 when a lot of games were still DOS based but they expected some of the audience would be playing it on Windows. That's just speculation though, from what I remember all the DOS based games I had installed on the family PC just had that generic Windows 95 DOS icon.

Yes. In the executable. Duh.
