I had to add a lot of games to Galaxy manually, selecting the folder to import for each one.
Where Galaxy saves these path information?
I'm asking because if these information are lost due, for example, an hard disk crash (the one where Galaxy is installed), I don't want to repeat this step that took me several hours (I have Galaxy installed to a different hard disk ... not the same used for the games).

You have two options here:

1) Click the small cog/gear-like icon at the bottom left of the client to bring up the options. You should then be able to change the default installation folder to the one of your choice (and if it contains GOG games, then it should add them automatically when you restart the client).
2) At the upper-left, you should see a "+" symbol. Click it and an you should see the option "Scan and Import Folders". Direct it to the folder that houses your games and it should add them all together to your library.

Once a game has been imported to the Galaxy client, the origins of the installer won't matter, as the game is updated to the latest version and will be compatible with any future scans and imports.
