Maybe GOG not wanting to release AAA games too close together since they're a rarity here.
Ancient-Red-Dragon: They have to take the time to gimp it down as much as possible and to remove as many features as possible and as much content as possible for the GOG versions (just like they did with Space Marine).

"OMG the GOG version is inferior!!!" Certainly how it can seem. But I think A-R-D is just one of a few who care much.
We can't have our cake and eat it too. GOG has very little leverage.
