It depends on why I stopped. Some games I don't finish because I can't figure out how to progress. My can't-beat list contains Limbo, Prince of Persia SOT, Deus Ex (the original), and Homeworld. I usually leave them be for a year or so, then go back and try again, and maybe that's when I'll figure out how to beat them. That's what's happening with Homeworld -- watched some Let's Play videos, fixed up where my strategy was going wrong, and now I'm making progress instead of getting owned.

Other games I don't finish are the ones I got bored with, usually because of the grind. FFVII, The Last Remnant, and Septerra Core are in this list -- I got almost to the end of FFVII and TLR before running out of steam. These games I won't touch again, I'll just watch Let's Play and read walkthroughs to find out the endings, then be done.

I don't worry about it. Life's too short and the pile of shame too big to get annoyed at unfinished games.

I've played the current version at the time and since the German versions usually came out a bit later back then, they were often already patched.
Construct an effigy of Chris Avellone with the unfinished games and beg his forgiveness. Only then can you receive his blessing for a bountiful harvest.

If you can select the racing difficulty, then the game is patched.  As far as I can remember, I didn't have that option, and with a mouse and keyboard, this part of the game was annoyingly difficult.  The shortcut was so useful!  :-)
Usually I just uninstall the game, though I keep the save-games in a folder dedicated to games I've broken up, so I don't lose the progress if I ever want to try to finish it after all. But there's two games I took to watching a Let's Play to see how they end:
Battlefield 4, as my system wouldn't handle a map two-thirds down the single-player campaign.

And Baldur's Gate: Dark Alliance. I couldn't get past the platforming puzzles in the Thieves' Maze where you have to jump from platform to platform to cross a chasm while they disappear underneath you (why the hell did Black Isle platforming tricks in a RPG game?). I'm watching a Let's Play to get to know the rest of the plot of DA1, before I try my hands on Dark Alliance 2 (a game that wasn't cheap, €15,49 second-hand, one of the most expensive PS2 games to be had nowadays, don't want to put that money to waste.).
I'm addicted to "not finishing" (starting is a better word) games, so... I love to start a new game on Gothic II over and over. Sandbox/Open World games like M&B make this task easier for me!

Other than that, if I hit the "no can do"-wall mid-game it's probably rage-quit/rage-uninstall after so many tries. If it's just the last boss I will resort to cheats, bat that's rare (Half-Life: Opposing Force and Two Worlds 2 OC come to mind).
There's no "can't finish" for me exactly. Games I stop playing fall into one of the following categories:

- I played enough.
- I don't feel like playing right now.
- I lost too much (possibly all) progress.

The "I played enough" category is simply a decision that I got all the enjoyment I could from the game and it got to be more of a chore than fun. Also could be that it's still fun but I feel that it would be more enjoyable to try other things. I have no problem just deciding to stop playing, even if I'm close to the end.

The "I don't feel like playing right now" is what typically happens when there's a difficult part to the game. It means that I'm still interested, but I procrastinate, doing other things instead of continuing the game. The problem is that sometimes this becomes a "lost all progress" problem, because either the game falls too far from my mind that I fell I better restart than resume playing, or I forget to transfer saves (or don't know how to do it) when moving to a new PC / tablet.

The "lost too much progress" category is for games that I want to play but need to replay more than I want at the moment. When full progress is lost these go back to the backlog to be played in the future. When the setback is only partial these fall under the "I don't feel like replaying right now" and I keep them installed and go back to them later.
It's a frequent problem of balance.

Generally I find that at that point, the game has lost it's momentum and probably isn't worth playing any more.

I've noticed that the last two levels / missions of a game are often like that.

I wish more games would let me change difficulty at any time. What really sucks is when you're playing on the easiest setting and you still can't get through.

Leave them for a time, return later with hopefully a different perspective.
Sometimes spot what i was doing wrong the second or third time around.
Or another perspective.......be it a YT video or guide, at a push a friends advice.
If that fails, uninstall it and move on.

If you lose too much progress, there's something wrong with your backup-strategy, i.e. the moments you create backups of your savegames..

Prince of Persia (don't know which one) there is a battle with two brothers (?) and this battle was so hard for me and I tried many hours on several days to beat them without success so I uninstalled the game and never touched it again.

The Lost Files of Sherlock Holmes: The Case of the Serrated Scalpel a old Point and Click from EA crashed before the final.

The Terminator: Rampage one of the floppy disks was broken and I never received a working one from Bethesda.

On one game don't know the name atm the tags copyprotection ruined a game for me because there was a part a key should drop but it never dropped..

Not always, sometimes poorly thought out patches can make using previous saves impossible.
