My first purchase on gog is meant to be a gift for someone and im wondering exactly what happens, does it get added to their gog account so they can download and play it any time? or do they need to keep an email receipt or something like that

1: you can actually mark it as a gift, email it to yourself and then just give them the redeem code found at:
https://www.gog.com/account/settings/orders

to redeem at:
https://www.gog.com/redeem

which means you can print it out and put it in a card etc.

OR just put in their email and send it direct.

2: i dont think gog send any form of reciept to the gift redeemer anymore, but you can still see who redeemed it under the first link i provided.

3: yes, as long as nothing goes wrong (ie a bouncing payment - unlikely) they will get the game permenantly in their gog account to download as they see fit.

welcome to drm freedom!

:)

Edit: Messy GOGmas too!

A follow-on question that may be of interest.

Is everything in a single transaction considered to be one gift, with one redeem code?

Yes.
Note that, for anti-fraud reasons, there is a limit on new accounts that might prevent you from gifting (I don't remember the exact numbers, but some weeks/months must have passed since you spent X amount of money on the store, depending on the payment method). If this is your case, you can contact Support and explain your case to bypass these measures.

A good point I forgot about.

Yes, but indovidual games can be redeemed from it (which is fine if you trust whoever you send it to, but accidents still happen).
